NOT DIET FRIENDLY, MAYBE COULD BE ADAPTED FOR CO BUT IS SIMPLE, QUICK, EASY AND TASTES GOOD AND WILL AMAZE THE GRANDDIES IF YOU HAVE THEM - MORE LIKE A PUDDING THAN A CAKE IMHO.

MINUTE CHOCOLATE MUG CAKE


Description:

The most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Ingredients:

1 Coffee Mug
4 tablespoons flour(that's plain flour, not self-raising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Small splash of vanilla (or copy Derek and put Kahlua)


And why is this the most dangerous cake recipe in the world?

Directions:

Add dry ingredients to mug, and mix well .
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired. EAT!
It's good!Grandkids love to make it, and watch it too!

Can serve 2 if you want to share!

Got it!  No that's not what I meant. You are not allowed to get it.

Just like my Mum. (RBL most of the time at 22MM/lt) "yes Mum you are allowed cake, one small portion a day.  Not a small portion for breakfast, morning tea, lunch, afters and tea.....

Cakes are naughty - but not for me..... Cheesy

To try to make it a little more diabetic friendly I will try it with wholemeal plain flour, and use Equal cooking granules instead of the sugar.
Will report back.
Possibly will be a little heavier consistancy with the wholemeal flour, but will work on it.
Sometimes for scones I use half/half white and wholemeal, but all of my family now tell me they really prefer the all wholemeal flour scones.
