SJ’s Rum and Sultana Pancakes

-      3 cups of Self raising Flour
-       Milk to mix
-      1 cup of sultanas
-      ¼ cup of brown sugar ( or to taste)
-      3 large Eggs
-      1 tbsp or to taste of a good quality red rum (like Captain Morgan, Bundaberg or Mount Gay)
-      1 tsp of Cinnamon

Prepare a smooth batter and let it sit for 20 minutes. Meanwhile place Billmans 18" pot over the fire and grease the bottom of the pot with extra virgin olive oil. Heat the oil until it is just starting to smoke.

That technique certainly works well KD, particularly if you love the taste of rum, however I have found that some non-rum drinkers and  children can find it a little overpowering.

Another variation which my wife especially loves, is to soak the sultanas in Cointreau for a day or two before using.  Smiley
