Potato, Pumpkin & Spinach Frittata (Read 5562 times)

500g potato peeled & sliced (about 6mm thick)
500g firm pumpkin peeled & sliced (as above)
2 cloves garlic, crushed
1 tbspn olive oil
6 eggs
1/2 cup cream
50g baby spinach (blanched)
1/4 cup coarsely grated parmesan cheese
Preheat camp oven to moderately hot. Cook potato & pumpkin slices to just tender (microwave, or oven roasted). Line spring form pan with baking paper & brush with olive oil & crushed garlic. Whisk eggs with cream. Layer 1/2 of pumpkin & potato in pan, top with spinach leaves & repeat these layers. Carefully pour egg & cream mixture over vegetables. Top with grated parmesan cheese & sprinkle with black pepper & paprika. Bake for about 1hr. (I found that it took longer than expected for the centre of the frittata to set, therefore extra time required). Remove from heat & allow frittata to set for 10mins before removing from pan. Slice & serve with grilled meat.
Cooked in 12 inch camp oven.
