On a recent trip up over the border at Texas we saw heaps of trailers at farm gates loaded with all variety of pumpkins at $2 and $3 each,  brought eight home and have been having pumpkin in soup, scones, fruit cake and baked in the CO ever since, good tucker.

Baked Pumpkin
Jul 5th, 2010, 12:59pm

Cooked this at a recent camp with some friends.
Recipe:
1 pumpkin
2 cups cooked rice
1 onion, chopped
season with mixed herbs
1 egg, to bind filling mixture
Hollow out pumpkin & fill with combined ingredients ie rice, onion, herbs, egg etc. Cook in medium camp oven until tender when tested. The large pumpkin I cooked took about 1 1/2 hrs. PS use your imagination with the filling. The old tried & true bread seasoning also works very well.
