Righto, here's my first entry in the competition. I cooked Cinnamon spiced pork shoulder in the Peke.
Ingredients:
2 kg pork shoulder
2 tblsp minced garlic
2 tblsp minced ginger
2 tsp ground coriander
1 tsp cayenne pepper
1/4 tsp grond cloves
2 tsp ground mustard seeds
1 tsp ground cardamon
2 tblsp ground cinnamon
1 cinnamon stick
1 tsp ground black pepper
2 tsp salt
1/2 cup rice wine vinegar (or other mild vinegar)
...
Rub pork with ginger and garlic salt and pepper
and combine all other spices.

Put oil into your base and brown skin side of shoulder.
...
Then combine vinegar and spices as well as cinnamon stick into the base of the pan and slow cook for 4 to 6 hours. adding veges is optional or serve with rice.

Steak & Kidney Cinnamon Pie

Pie Ingredients

1 kilo Steak & Kidney
Large Onion
Stock
Port
Bay Leaves
Cinnamon Stick
Salt & Pepper

Place all ingredients in camp oven. Don't forget port.  Two bay leaves and salt & pepper to taste

The main ingredient - 1 stick of cinnamon. Cook for one and a half hours

Cooked pie filling thickened with a little cornflour.  Allow to cool

Wedges to serve 
Slice potatoes into wedges.  Coat with oil and sprinkle with salt, chilli flakes and ground cinnamon

Using short crust pastry for the bases and puff pastry for the top. Pies ready for the oven

All done.  Wedges in a 10 inch camp oven.  Pies in a 12 inch Bedourie camp oven and peas in a six inch camp oven

Chianti Stew

A nice warming stew for those chilly winter days.  Click the thumbnails for larger images

Ingredients:
Gravy Beef
Chianti Classico (or stock)
4 Red Potatoes
2 Portabello Mushrooms
2 Onions
4 Carrots
3 Celery
4 cloves Garlic
1 Cinnamon Quill
800g can Australian Ardmona chopped tomatoes 
small amount Olive Oil
Salt and Pepper to taste


The kitchen and ingredients

... ...

Chop the ingredients roughly, cut the meat into 1" cubes and coat with flour
Place the potatoes in a bowl of water
Brown the meat in small batches (or not)

Saute all the other vegetables and herbs in the olive oil

... ...

Add the meat, tomatoes and half the bottle of Chianti Classico (or use beef stock)

... ...

Simmer for 2 glasses of wine or half a book, then add the potatoes and simmer for another hour

... ...

Once the potatoes are cooked allow the sober one to plate up

Cinnamon Meatloaf and Cinna-Buns

Ingredients:

1 kilo lean ground beef
2 large size eggs
1 package Kraft "Stovetop Stuffing"
1 tablespoon Chipole Tabbasco sause
2 tablespoons Heinz Ketchup
1 teaspoon ground Cinnamon

Some potatoes

Pilsbury Cinna-Buns in a can.

Method:

Put all the meatloaf ingredients into a 12" oven
and blend by hand, forming a loaf shape.
Put some potatoes on either side of loaf.

Bake until done. (1 1/2 to 2 hours)

Open the can and place the raw Cinna-Bun dough into
a 10" oven.

Bake until done. (20 - 25 mins)
Add icing packet from package.

Might try more cinnamon next time, it was barely discernible.

  I make meatloaf lots of different ways, often with finely chopped veg, but this one is my favorite for being so easy, plus it tastes great and slices as thin as you like without falling apart (great for sandwiches). The Stove top stuffing mix has dehydrated veg, mainly onions, dried bread cubes and a blend of spices.

Brian's Cinnamon Roll Apple Pie.

CRUST
Short crust pastry sheets x 4
Melted unsalted butter
2 teaspoons cinnamon
1 egg beaten with 1 teaspoon water

PIE
Can pie apples
250 grams unsalted butter
1 cup plain flour
1 cup brown sugar

ICING
1/2 cup icing sugar
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
little milk to mix

Paint pastry sheets with melted butter
sprinkle with cinnamon and roll up tight.
Cut into 1/2" pieces and line pie dish with them. Press down tight.
Brush with egg wash.
I then part baked the pie crust.

Fill pie shell with apples.
Mix the butter, flour and brown sugar to form crumbs. cover the top of apples with this mix.
Cook in oven till top is brown. Let cool.

Mix up icing and drizzle on top.

PEARS POACHED IN PORT AND CINNAMON

2 Litres of Tawny Port
2 tablespoons of Castor sugar
2 Cinnamon sticks
Vanilla essence
2 Bosch pears and 3 Williams pears(wanted to try both to find a difference.
Cooking Chocolate (Milk)
Cream
Thickened Cream

Peel the pears, leaving the stalks on
Core the pears
In a 10 " CO place the Port, Castor Sugar, Vanilla and Cinnamon stick
Place pears in CO and simmer for about 60 minutes till cooked. Bosche were done and the Williams were just a little behind.
Remove and chill

Heat chocolate in a glass measuring cup over steam.
Add the cream and stir on.

Plate up..
They were good, but not as good as grandmas.

This is a slice recipe I was recently given so this was a good chance to try it out. I wanted a dessert, so I made it into a round tin so it could be served as a triangle.
For the cinnamon I made this by mixing sugar with cinnamon.

This is quite easy to make an could be made on camping trips, and looks very good on the plate.
Apple & cinnamon slice
Ingredients

...

340g pkt golden buttercake mix
1 cup (90g) desiccated coconut
125g butter, melted
400g can apple pieces
300g sour cream
1 tsp cinnamon sugar

Method

Preheat the oven to 180°C. Grease a 20cm square cake pan. Line base and the two opposite sides with baking paper, extending the paper 5cm over edge of pan.

Combine cake mix, coconut and butter in a medium bowl. Press mixture evenly over base of prepared pan. Cook for 15 minutes, or until lightly browned. Cool slightly.

Spread apple evenly over base, then spread sour cream evenly over apple and sprinkle with cinnamon sugar. Cook for further 20 minutes, or until sour cream has set.

Cool in pan. Cut the slice into fingers to serve.

Pecan Cinnamon Buns.

This is my method using Laucke sweet bread and bun mix.

Ingredients

...

500g  Laucke sweet bread and bun mix
½ teaspoon cinnamon

170g butter
¾ cup brown sugar
1 cup chopped pecans, divided in half
1 tablespoon ground cinnamon
60g melted butter

Method

Mix Laucke sweet bread and bun mix per instructions on packet but add ½ teaspoon cinnamon in the dry mix first.

While dough is rising, melt 170g butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 23x33cm baking tin. Sprinkle bottom of pan with half the pecans and set aside. Melt remaining butter; set aside. Combine remaining brown sugar, pecans and cinnamon; set aside.

Turn dough out on to a lightly floured surface and roll into an 45x35cm rectangle. Brush with half the melted butter, leaving a 1cm border uncovered. Sprinkle with the cinnamon sugar mixture.

Starting at the long edge, tightly roll up, pinching seam to seal. Brush with remaining melted butter. With a serrated knife, cut into 15 pieces. Place, cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 190 degrees C.

Bake for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert on to serving platter. Scrape remaining filling from the pan on to the rolls.

STEVE'S CINNAMON MEAL

CINNAMON CHICKEN SERVED WITH ROASTED SWEET POTATO WITH CINNAMON PECAN CRUMBLE, HONEY CINNAMON CARROTS  , (and because better half wanted greens) BROCCOLI.     (carrots cooked in alfoil on coals)

DESERT,    APPLE CINNAMON LEMONADE SCONE SCROLL LOAF Huh (and custard)
