Cheese English Muffins

Ingredients (approximation)

350g plain flour(I used Laucke flour )
250ml milk ( you can use water)
1 egg
1 Teaspoon salt
2 teaspoons yeast
1 Teaspoon Caster sugar
some melted butter
some grated cheese
some grated parmesan cheese
Polenta

method

Warm the milk (or water) add the yeast, caster sugar, and let stand until you see it working.
In a bowl the egg, flour butter cheese and salt, and mix through, then add the mild and yeast, and mix.

Knead until smooth, approximately 10minutes by hand, cover and let it stand until doubled in size.
Roll out until around 10cm thick and cut out the muffins, and cover with the polenta.
Heat a good heavy cast iron pan, or a camp oven dry fry, (only a very light coating of oil is needed for the first batch ) turning as needed, around 10minutes for each batch.

Serve with bacon, an egg and a slice of cheese.

Come on , Jc. I've brought worse looking muffins than those. They turned out perfect. How haven't I seen this thread until now. Yum yum.
 

Its not burnt. Just really well done.

There is just too much on here to see I reckon.  I remember these but have never got around to doing them.  Was always going to make them a size suitable for a jaffle iron. Smiley
