A little experiment.
Definitely making this one again.

Beer and Mixed Fruit Damper.
11/2 cups SR Flour
˝ teaspoon baking powder
2 table spoons butter
Dried mixed fruit
Beer
Add baking powder to flour and mix.
Rub butter into flour
Add mixed fruit
Now add about ˝ can of beer and mix. Keep adding beer till you get a very soft mix.
Place mix into a tin so it keeps its shape.
Bake for about 40 minutes at about 180 deg. c

Brian, how do you think it would go substituting ginger beer for the beer.
When I go camping and cooking for the youth groups the beer may be seen as inappropriate in the kitchen.
Or for that matter using soda water.

Brian made this on the COG yesterday  the taste and texture were absolutely  fantastic  better than some  brought from top class bakeries
I did not taste  the beer at all and with the amount used I very much doubt that it would have any alcoholic effect at all
I am going to make it for my grand kids next weekend  (eldest is 7)
