Entree - Prawn, Scallop & Chorizo

...

Slice chorizo into thick pieces.  Cook on a hot pan until outside is crispy and chilli juices have leached out then grill prawn and scallop until cooked. I used the lid from my Bedourie Camp Oven.

Remove all from pan and pour lemon juice and half a cups of wine into the pan and simmer until reduced.

Plate up and spoon over sauce

I'm going to try this, but will substitute redclaw tails for the prawns. Every time I look at Derek's pic of the finished dish, I start drooling.
