Devilled Sausages

Ingredients

...

beef or pork sausages
1 onion, halved, sliced
1 or 2  fresh pear, cored, sliced
Ľ cup tomato sauce
2 tbsp cornflour
2 tbsp Worcestershire sauce
1/2 tsp curry powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1 tsp brown sugar
Ľ cup sultanas

I used a Moroccan past instead of the cumin and coriander.

Method
Heat the oil in the camp oven and cook in batches the sausages for 4-5 minutes over a low to medium heat until browned.

Add the onions and pear, then cook for a further 2 minutes.

I cut the sausages in half.

Combine the tomato sauce, cornflour, Worcestershire sauce, spices and brown sugar with 2 cups of water, then whisk to mix well.
Add the sultanas, then pour the sauce mix into the pan and mix well. Cover and simmer gently for 8-10 minutes, stirring occasionally until the sausages are cooked and the sauce thickens.

Serve the sausages with mashed potatoes and vegetables.

Chorizo Pizza

Ingredients
Pizza dough
Chorizo
Mozzarella cheese
Diced ham
Anchovies
Barbecue sauce
Oregano

Method
Start preheating a reasonably large camp oven with 5 or 6 beads underneath and about 18 on top.  On a piece of baking paper, stretch out and flatten dough till its at the required size. Smear with barbecue sauce, add sliced chorizo and all other ingredients as desired. Carefully place pizza into camp oven and bake for 20 minutes or until it's browning on top.

Kingbrowns Sausage Rolls

Ingredients
1kg Pork Sausages
1kg Beef Sausages
3 Onions Grated
3 Carrots Grated
1 tablespoon Sage
2 teaspoons Minced Garlic
Salt and Pepper for seasoning meat
Puff pastry sheets
Egg wash
Method
Gut both lots of sausages and mix together well. Add all other ingredients (not the egg wash) and mix well again. Leave for at least an hour or overnight.
Lay three large tablespoons of the mix along the bottom edge of the pastry. Smooth out to make even then roll it right up to the top. Cut the roll in half then half again to make 4 sausage rolls. Stab them a few times with a fork through the top.
Bake directly on the floor of a camp oven for approx 35 minutes or until golden brown on top.

Sausage and Bean Casserole

Ingredients

A dozen sausages
1 cup diced ham
2 onions, sliced
2 carrots, diced
1 large can baked beans
1 can crushed tomatoes
1 cup chopped mushrooms
2 teaspoons garlic
2 teaspoons chilli flakes
A good splash of Worcestershire sauce
Chicken stock
2 bay leaves
Mixed herbs (I used thyme, basil and coriander)

Method

In a large CO, preheat some oil and fry off the garlic and chilli. Add the onions and cook till translucent. Add sausages and cook till browned. Throw the mushrooms and ham in and cook for a minute or 2. Add all remaining ingredients, top up with a bit if water, cover and simmer for an hour stirring occasionally until nice and thick. Served with mashed potato

Curly-Q Grilled Sausages

Beef sausage

1 1/2 cups water

1 pinch salt

barbeque sauce, or any sauce

skewers

Bread roll

2 onion

Place sausages into a skillet over medium heat and pour in water. Add a large pinch of salt to the water and bring to a simmer. Cover and cook for about 3 minutes per side.

Remove sausages from pan and let cool to room temperature. Insert a  skewer the long way through sausage.

Place a sausage on a work surface and start making a knife cut about 3/4 inch from the end, holding the knife blade at a slight angle and cutting down to the skewer. Slowly rotate the sausage and continue cutting in a spiral until sausage is cut to about 1 inch from the other end. Gently spread the sausage apart on the skewer to create about 1/2 inch of space between the curls.

Place sausages onto the pan and cook until browned and meat is no longer pink inside, about 6 minutes; turn occasionally.

Brush sausages with barbeque sauce. Cook, continuing to turn sausages, until sauce has caramelized onto the meat, about 1 minute per side.

Transfer to a plate and let sausages cool for about 30 seconds before removing skewers for serving.  I served with long bread rolls and oinons and salad
