Kingbrowns Sausage Rolls

Ingredients
1kg Pork Sausages
1kg Beef Sausages
3 Onions Grated
3 Carrots Grated
1 tablespoon Sage
2 teaspoons Minced Garlic
Salt and Pepper for seasoning meat
Puff pastry sheets
Egg wash
Method
Gut both lots of sausages and mix together well. Add all other ingredients (not the egg wash) and mix well again. Leave for at least an hour or overnight.
Lay three large tablespoons of the mix along the bottom edge of the pastry. Smooth out to make even then roll it right up to the top. Cut the roll in half then half again to make 4 sausage rolls. Stab them a few times with a fork through the top.
Bake directly on the floor of a camp oven for approx 35 minutes or until golden brown on top.

That depends on which oven I am using, I have made these in everything from 14 inch ovens to 24 inch with probably a 16 inch the most used.
but yeah lots of heat on top and not much under otherwise they will burn. But for a 12 inch I would probably say 5 under and a full ring plus two on top would be a good guide. It is one of my most requested recipes at functions and makes a great starter for the crowd while they are having a few beers while the mains are cooking. I originally stole the recipe off one of my kids who learnt it at cooking class or whatever they call it at school  Grin
They are heartburn free I have been told by a few who normally won't eat sausage rolls because of the effect on them. Smiley

Tried baking paper under, turned over to try and even out the cooking but certainly not the result you have. Embarrassed
