I went shopping today, and brought a rack of lamb on special. Cooked it up tonight in the camp oven, so I guess I will post the photos up later if they look good.
Also modified my choofer today, and tried it out as well.

Rack of lamb

Rubbed down with a rosemary and garlic paste mix.

Roasted for around 40 minutes.

Served with vegetables.

Lamb Chop Casserole

Ingredients

Lamb shoulder chops
Potatoes
Sweet potato
Carrots
Onions
Can of crushed tomato
Garlic
Stock powder
Plain flour
Herbs/spices (I used thyme, basil, parsley and paprika)

Dumplings -
1 cup SR flour
2 tablespoons soft butter
50mL milk
50mL water
Thyme

Method
Coat lamb chops with flour. Preheat camp oven. Add garlic and sliced onions. Fry for 5 minutes. Add lamb chops and brown on each side. Throw in the chopped up vegies, can of tomato, stock powder and herbs. Mix together and cover with water. Bring to a simmer, cover and let it go for a couple of hours, coming back to stir occasionally.
For the dumplings, put flour and butter into a bowl and mix with your fingers until it's like breadcrumbs, add milk, water and thyme and mix together into a dough. Mould into golf ball sized portions. Add to the top of the casserole when its nearly ready and allow to cook for another 10 minutes or so until they puff up nicely

Pork Leg Roast

Ingredients

Pork leg
Selection of root vegetables

Method

Pat leg dry with paper towel. Lightly oil, then cover in a respectable amount of salt, rubbing into the skin.
Put about half a bag of heat beads into a Weber and split into 2 piles, lighting them up about an hour before the roast goes in. Put the roast in and have all the vents fully open for the first hour, then back them off once the vegetables are added and cook for a further hour or so

Creamy Thai Chicken Pieces

Chicken pieces
1 onion sliced
1 carrot
Red capsicum de seeded and slice
165 ml coconut milk
Broccoli and beans
Creamy Thai  base

Cook Chicken until brown.
Add onion and capsicum and cook until soft.
Add recipe base, coconut milk and beans  and stir through. Simmer uncovered for 5 minutes. Serve with rice.

No Fuss Vindaloo Shank
Ingredients
Onion
Capsicum
extra Chilli if you like it hot
sweet potato
A jar of vindaloo sauce
The same jar of water
Method
Brown the shanks for at least 40 minutes in a hot oven
add all the veges and the liquid
Cook for 4 hours with lid on and heat on the lid, no stirring
Result looks like this.
