3-2-1 Beef Ribs

Ingredients
Dry Rub
1/4 cup paprika
1/4 cup chilli powder
1/4 cup brown sugar
1/4 cup ground black pepper
1 tablespoon cayenne
1 tablespoon garlic powder
1 tablespoon salt

Beef ribs
Bourbon
BBQ sauce

Prepare rub and massage onto the ribs a day before cooking. Place a line of heat beads 4 deep around the edge of a Weber. Place a couple of chunks of smoking wood on top of the beads. Put half a dozen lit beads at the start of the bead line, this will maintain a temp of around 110°. Place ribs onto grill rack and cook/smoke for 3 hours.
Mix up 1/4 cup of bourbon and 1/4 cup BBQ sauce. Place ribs in alfoil, pour on bourbon sauce and wrap. Place back in the Weber and cook for a further 2 hours. Remove ribs from alfoil, retain the sauce and brush onto ribs. Place back in the Weber and smoke for another hour, basting with sauce a couple of times

Beer & honey roasted chicken thighs

Ingredients
4 chicken thighs
1 bottle home brew beer
2 Tbsp honey
1 Tbsp  mustard
1 tsp corn flour
garlic, minced
Salt and pepper to taste

Method.
In the camp oven, combine the beer, honey, mustard, corn flour and garlic and whisk it together until the mustard, the honey and the starch are dissolved.

Season the chicken thighs with salt and pepper on both sides and add them, skin side down, to the to marinate

Roast for 45 minutes, turn the chickens skin side up and let it roast for 45 more minutes or until chicken is golden brown.

Coq au Vin

12 baby brown onions
4 tablesspoons of olive oil
200 grams coarsely chopped rindless bacon
300 grams button mushrooms
3 garlic cloves (crushed)
˝ cup plain flour
4 chicken thighs
4 chicken drumsticks
Ľ cup tomato paste
2 cups dry red wine
2 dried bay leaves
6 sprigs of fresh thyme

HOW TO

Peel the onions and brown with olive oil in camp oven.  Remove when ready
Cook bacon, mushrooms and garlic in olive oil, Stir until brown and remove from CO.
Season the flour add chicken and toss till all chicken is coated.
Brown the chicken in the CO.
Return all the other element, add the red wine, tomato paste, bay leaves and thyme.
Bring to simmer for about an hour.

Served with potato, corn and broccoli.

Coq-au-vin or chicken in red wine.

Ingredients

Chicken Marylands
Seasined Flour
Olive oil
Garlic
Bayleaves
Thyme
Button mushrooms cut in 1/2 (leave whole if small)
Onions
Bacon rashers
Red wine
Chicken stock
Salt and pepper

Method
First marinade the chicken in the red wine, 2 bay leaves and  garlic paste crushed (leave for several hours or overnight if you have the time)
Remove the chicken from the marinade (keep the liquid) and pat dry. Toss the chicken in the seasoned flour, shake off any excess.
Heat the oil in the camp oven, fry the chicken skin side down until starting to brown.
Remove chicken from the camp oven. Add the bacon, onions, mushrooms and rest of garlic into the camp oven and fry for a few minutes. Return the chicken, add in the marinade, rest of the wine, herbs and enough chicken stock to cover the chicken.
Cover the dish, cook at a medium heat for 2 to 3 hours or until chicken is starting to fall off the bone. Remove the chicken and simmer the sauce on the stove to reduce if required season with the salt and pepper.

Lamb Shanks

Lamb shanks

Crushed tomatoes
Carrots chopped
Onions diced
Potatoes chopped
Mushrooms chopped
Olives halved

Add the whole lot to camp oven and slow cook until lamb shanks comes off the bone.

Beer battered tabby tails

Ingredients
Flour
Egg
Beer

Method
Add flour to a mixing bowl. Add egg and slowly whisk in beer till it gets to a nice consistency. Dip in yabby tails and fry till golden brown, about 2 or 3 minutes. Enjoy
