Croissants

Ingredients

500g plain flour
Water
1 teaspoon salt
50g sugar
4 teaspoons dried yeast
300g butter
1 egg

Method

Put flour, salt and sugar into a bowl. Mix in 300mL of water with the yeast and add to the dry mix. Combine and then knead for 10 minutes. Cover and chill for 2 hours. Beat the butter out into a large rectangle approx 20x15cm. Roll out the dough till its about twice the size of the butter. Place butter in the middle and fold over the edges of the dough to meet in the middle. Fold in half and chill for another 30 minutes. Repeat the rolling, folding and chilling process 3-4 times. Wrap and chill overnight.
Roll the dough out till it's reasonably thin, and start cutting triangles out of it. Roll the triangles up and curl the edges in. Repeat process till all the dough is gone, making the croissants as big or small as you want. Bake in a camp oven at around 180-200 degrees for about 15 minutes, with only a small amount of heat underneath as the bases will burn easily.

Pasty

Ingredients
Potatoes
Pumpkin
Swede
Onion
Mince meat
salt,pepper
Packet puff pastry

Method
Chop up all veggies mix with mince meat season to your taste
Open  pastry sheets separate cot to your desired  shape and size
place mixture onto pastry  fold and cook
Plate up and enjoy

Meat Pie
onion finely chopped
beef mince
potato diced
water
green peas
beef stock cubes
tomato sauce
Worcestershire sauce
pinch salt and pepper to taste
plain flour
shortcrust pastry
puff pastry
egg to glaze

Method
Cook meat and onion until meat is well browned. Add ľ cup water, potato, stock cubes, sauces and seasoning.  Bring to the boil and simmer for 15 minutes. Blend flour and the remaining water, add to meat, bring to the boil and simmer for 5 minutes.
Line a pie dish with the short crust pastry. Spoon in the cooled meat mixture and green peas, Moisten edges of pastry with water. Top with puff pastry, pressing down to seal the edges, trim and glaze with egg.
Bake in camp oven until cooked.

Easy Apple Pies.

apples
puff pastry, thawed
butter, melted
caster sugar
ground cinnamon

Method.

Preheat camp oven.

Cut each apple crossways into four circles. Remove the seeds.

Cut the pastry into 2cm-wide strips. Wrap 2 pastry strips around an apple piece to form a cross shape.  Brush the pastry with the butter and sprinkle with the sugar and cinnamon. Bake until the pastry is golden and puffed.

CUSTARD TART

Ingredients
BISCUIT PASTRY
90g Butter
1 1/4  Cups Plain flour
1/4 Cup Self-raising Flour
1 Egg
CUSTARD
3 Eggs
1 Tsp Vanilla
2 Tbl spoon Sugar
2 Cups Milk
Nutmeg

METHOD
PASTRY
Beat butter add sugar
Add lightly beaten egg
Work in flour
Kneed then refrigerate  for 30 mins
Roll pastry an line pie plate
CUSTARD
Beat eggs,vanilla and sugar
Heat milk stir into egg mixture

Pour  into pie plate cook 15 mins add nutmeg cook a further 15 min

Sausage Rolls

Ingredients

Sausage mince
Zucchini
Carrot
Onion
Cheese
Soy sauce
Worcestershire sauce
Tomato sauce
Salt and pepper
Puff pastry
Scrambled egg

Method

Grate everything as finely as possible and mix together well. Place a line of mix onto pastry. Brush some egg onto edge of pastry to help it stick. Roll and then cut into portions. Brush top with egg and bake in a camp oven focusing heat on top so as not to burn the bottoms. Rolls are done when lightly browned on top
