SCHWEINSHAXE (GERMAN PORK KNUCKLE)

Pork Knuckle
Oil
Crushed Garlic
Flaked salt
Caraway seeds
Granny Smith Apple
Large Onion
Stubby of beer

Chop up apple and onion and apple enough to cover the base of camp oven.

...

Rub over the knuckle with oil, lots of salt, garlic and caraway seeds.  Place on top of the apple and onion and pour in a stubby of beer.

Cook at a low/medium heat for four hours.  I am using Heat Beads on and under a 12 inch camp oven.

Taking a peak after two hours

Cooked at four hours. Will you look at that crackling.

From here I removed the knuckle then strained the liquid off and then reduced it to make a very lovely sauce.

Served up with a horseradish flavoured mashed potato and Bavarian SauerKraut.

A feast with red wine for her and of course as with any German dish I had to have beer

We certainly did justice to it for sure and the meat literally fell off the bones once the crackling was cut Smiley

Seafood Platter

Ingredients
Crayfish
Prawns
Oysters
Mussels
Bacon bits
Tomato sauce
Worcestershire sauce
Garlic butter

Method
Mix together tomato and Worcestershire sauce. Drizzle into oyster shells. Sprinkle bacon bits on top and set aside. Smear garlic butter onto halved cray tail. Preheat grill. Cook cray tail for about 8 minutes shell side down then flip and cook for a further couple of minutes. Prawns cook for a couple minutes each side. Oysters and mussels for a couple of minutes each. Serve on a platter with seafood sauce, vinegar and a washing water dish on the side

tadpole......you left the best ingredient off the platter.....the packet of cooked yabbies......-1 point for that.......ok, I know......you did call it a "seafood platter" and they are freshies.....looks bloody good anyhow.......hope that was part of your Christmas Festivities....... have a HNY  Smiley

Reverse Seared Beef Steak

Ingredients
Thick lump of steak
BBQ steak rub
Veges

Method
Cover steak in the rub and sit in the fridge for a couple of hours. Preheat a kettle BBQ to a low heat (around 120°C), put steak in on opposite side to heat beads and throw some wood chips on top of the beads. Cover and allow meat to smoke and slowly warm up for about an hour and a half. When internal meat temperature reaches 44°, remove from heat and allow to rest while preheating grill on the barbecue. When hot, throw it on and cook till desired doneness is reached (I aimed for 55° medium rare but turned out a medium). Serve with barbecued vegies

I brought a nice pork belly.

Ingredients

pork belly  marinated    
can of ginger beer
and roast vegetables

Cook pork belly with ginger beer for around 2 hours on a medium temp with lid cracked slightly. When the meat looked caramelized, it is ready to serve.
I served with roast vegetables.

Lamb boned out.
Potatoes
Pumpkin
and green vegetables. (not in photo due to visitors arriving )

That was all I got, we had a few people drop in and I never got any more photos.
