I managed an entry today.  Pork Knuckle.

Have never cooked it before let alone in the camp oven.  Absolutely spot on and the flavour according to Maggie better than we have experienced in quite expensive restaurants.

Butcher charged $9.99 a kilo and the knuckle was just over a kilo.

Enjoy!!!

Got my Christmas seafood platter up. Couldn't be bothered with presentation on the day so it was just kind of lumped into a big baking tray  Grin

There is yabbies on that platter Mikel but they were buried deep under the mussels and prawns. I had plans of a nice presentation showcasing everything with some fresh fruit and veg but after a big lunch my enthusiasm had wavered by mid afternoon  Roll Eyes
