Honey Mustard Corned Beef

Ingredients
Corned beef
Seeded mustard
Honey
Brown sugar

Method
Mix a couple of tablespoons of mustard with a tablespoon of honey. Smear over meat, saving half for later. Sprinkle brown sugar on top. Roast in a camp oven for a couple of hours at a reasonably low heat. Throw in some veg and refresh heat beads, roasting for another hour. Let it rest for 5 before serving

Skippy Bolognese

Kangaroo mince
Bolognese Sauce
onion
spaghetti
butter
peas

Heat butter to camp oven, a  cook onions before Browning Kangaroo mince. Add sauce and slow cook. Add peas and continue to cook.
When ready serve with spaghetti.

CHEESE STUFFED CHICKEN BREASTS WRAPPED IN BACON

1 Chicken breast
50 grams of Camembert cheese (or cheese of your choice)
3 strips of streaky bacon
Olive oil spray

HOW TO

Cut a pocket into the side of the chicken breast
Stuff the cheese into the pocket
Wrap the bacon tightly around the chicken and secure with a skewer
Place on a lightly oiled oven tray or base of a camp oven and cook for about 45 mins 200C

BACON WRAPPED POTATOES WITH BLUE CHEESE SAUCE
Olive oil spray
4 strips of streaky bacon (cut in half)
8 small potatoes
Ground black pepper
1 cup sour cream
50 grams crumbled blue cheese
2 very finely sliced shallots

HOW TO

Wash potatoes and pierce each about 8 times with a skewer. Tightly wrap bacon around each one using a tooth pick to secure.
Lightly oil the base of a preheated camp oven and place potatoes in the camp oven.
Oven will need to be about 200C.
Turn after about 25  mins and cook for a further 25 mins.
Try a skewer on the potato to determine if cooked through.

In a bowl combine the sour cream, blue cheese, shallots and pepper. If desired add a little milk
if the mixture is not smooth enough.  Drizzle the sauce over the potatoes. For those who
don’t like Blue Cheese, simply omit the cheese from the sauce.

Vegemite  lamb

Ingredients
Leg lamb
1tblsp vegemite
1 tblsp french onion  soup
3 tblsp hot water
sprigs of rosemary

Method

mix vegemite, french onion soup, hot water into a marinade
make knife cuts in lamb insert rosemary
paint lamb with marinade
refrigerate fir 2 hours
Roast at 190

Serve with roasted cheese,bacon stuffed hasselback,potatoes,carrots and pumaking
