BACON AND EGG DAMPER
310 g self-raising flour
3 tbs olive oil
150 g tasty cheese grated
2 bacon rashers diced
1 finely sliced shallot
1 egg
1 tsp of salt
3/4 cup milk

Preheat oven or camp oven to 190C.
Combine flour with salt and olive oil in a bowl.
Stir in shallots, bacon and 2/3 of the cheese
In separate bowl, combine egg and milk. Stir egg mixture into dry ingredients and mix to a soft dough.
Turn onto lightly floured board and knead lightly. Form into a ball and make a depression  in the middle. Sprinkle the remaining cheese into the depression followed by cracking an egg onto the cheese.
Place damper onto baking paper.
Bake for 30 minutes at about 190C or until risen and golden.

Tasted real good with real butter.
Technically not a damper, its got an egg in the mix. Was still very good the following day after a short microwave.

Might technically not be a damper Aart but she looks the goods.

The one in the video didn’t have oil and shallots.
