Chilli Lobster Tails

Ingredients
Lobster tails
Pine nuts, handful
1 onion, sliced
3 cloves garlic
Handful of chilli's chopped finely
Half a bunch coriander
Basil
2 teaspoons of crushed ginger
Half a cup of soy sauce
Quarter cup sweet chilli sauce
Quarter cup rice wine vinegar
Half a cup of chicken stock
Tablespoon sesame oil

Method
Combine soy, sweet chilli, sesame oil, stock, vinegar,  garlic, ginger, chilli and chopped herbs in a bowl. In a small camp oven, brown off pine nuts and onion. Add wet mixture and simmer down for 5 minutes. Add lobster tails and cook until done. Best served with rice, but my wife had made a nice salad  Wink

Chicken Peanut Stew

This is my adaptation of an old South African Recipe

6 Chicken thighes
Onion
Tin tomatoes
1 teaspoon paprika
1 Teaspoon crushed garlic
1 Teaspoon crushed ginger
1/4 cup smooth peanut paste
1 cup chicken stock 9not in photo0
Salt & Pepper to taste
Crushed peanuts to serve

...

Brown the chicken thighes in a little oil

...

Removed chicken and add the onions and cook until soft

...

Add all other ingredients except crushed nuts, cook until all blended.

...

Return chicken to oven and cook for about 30 minutes

...

Serve with steamed rice and and sprinkle over with crushed peanuts

...

Chicken and Macadamia Nuts Schnitzel Crumbed

Chicken Breast Fillet
Macadamia Nut
Batter mix
Bread Crumb
Salt and Pepper


My method
Chop up nuts, mix with bread crumbs. Roll Chicken in flour, dip in batter mix, coat chicken in nut and bread crumb mix. Fry chicken and serve.

Moist Carrot Cake
2 cups (260 grams) plain flour
2 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/4 cups (295 ml) canola or other vegetable oil
1 cup (200 grams) white sugar
1 cup (200 grams) lightly packed brown sugar
1 teaspoon vanilla extract
4 large eggs
3 cups (300 grams) grated peeled carrots
1 cup (100 grams) chopped walnuts
1/2 cup (65 grams) raisins
FROSTING
225 grams cream cheese, at room temperature
1 1/4 cups (140 grams) powdered sugar
1/3 cup (80 ml) thick cream
1/2 cup (50 grams) chopped walnuts, for topping cake

MAKE BATTER
Heat the oven to 180deg.C. Grease two a cake pan I used a 12” round tin and line the bottom with baking paper.
In a medium bowl, whisk flour, baking soda, salt, and the cinnamon until well blended. In a separate bowl, whisk the oil, sugars and vanilla. Whisk in eggs, one at a time, until blended.
Switch to a large rubber spatula. Scrape the sides and bottom of the bowl then add the dry ingredients in 3 parts, stirring gently until they disappear and the batter is smooth. Stir in the carrots, nuts and raisins.
BAKE CAKE
Bake until the top of the cake is springy when touched and when a toothpick inserted into the centre of the cake comes out clean; 35 to 45 minutes.
Cool cake in pan for 15 minutes then turn out onto cooling racks, peel off parchment paper and cool completely.
TO FINISH
In a large bowl, beat cream cheese with a handheld mixer on medium speed until creamy, about 1 minute. Beat in the powdered sugar, a 1/4 cup at a time until fluffy. Pour in cream and beat on medium speed for 1 minute. Chill covered until ready to frost cake.
When the cake is completely cool, frost the top of cake. Scatter nuts on top.

Macadamia and Sugarbag Tart

Ingredients

Pastry
1/2 cup SR flour
1 cup Plain flour
1/4 cup Custard powder
1/4 cup Cornflour
1/2 cup Caster sugar
125g Butter
1 egg

Method
Rub butter into dry ingredients then add sugar
Mix egg with a little water
Add to dry ingredients
Roll pastry to fit dish
Cook in a moderate oven

Filling
1/2 cup Brown sugar
1/2 cup sugarbag (native bee honey)
50g Butter melted & cooled
3 Eggs
1 cup Macadamia nuts
Method
Toast macadamias for about 5 minutes or until golden
Beat all the ingredients then mix in the roasted macadamias
Pour filling onto pre-baked pastry in the dish
Bake for about 40 minutes or until mixture is just firm
Serve warn or cold with cream or icecream or custard

Almond Crusted Baked Chicken

Ingredients

3 skinless chicken breasts
Almond Meal
sliced Almonds
1Egg
Bacon
Diced Tomatoes
Butter
Cheese
Garlic paste
Spaghetti Bolognese base
Spaghetti

Method

Stuff each breast with a mixture of butter cheese and garlic. Coat each breast with flour, then beaten egg then almond meal. ( I did this twice to get a good coating) Put a piece of bacon on top of each breast, and sprinkle a few shaved almonds on top.
Put them into a camp oven and bake until done.
While the chicken is cooking I made a simple sauce, Diced tomatoes and a packet Spaghetti Bolognese base, which I cooked of until I had a thick tomato sauce.
About ten minutes before the chicken was cooked I poured a little sauce over the chicken, kept the rest for a sauce over the spaghetti.
