Ingredients
Diced kangaroo fillet
Mushrooms
Onion
Carrot
Celery
Vege stock
Garlic
Wholegrain mustard
Flour
Fresh basil and oregano
250g butter
Shortcrust pastry
Half a cup cold water

Method
Coat kangaroo in flour and fry till browned. Add onion, celery, carrot, mushrooms, garlic, mustard, stock and herbs. Cover with water, reduce heat and simmer for an hour or so.
Combine a cup and a half of flour with 50g of butter and massage till its like breadcrumbs. Add the water and stir into a dough. Roll out dough, place remaining butter on a strip in the middle and fold over, refrigerate for half an hour and repeat about 4 times.
Place shortcrust pastry into pie pans and weigh down with dried peas or similar. Bake for 5 mins until set. Put stew into pans and top with puff pastry. Bake for half an hour till browned
