Boiled Fruit Cake
Ingredients
375 g mixed fruit
3/4 cup brown sugar
1 tsp mixed spice
1/2 cup water
125 g butter
1/3 cup Bundaberg preservative
2 eggs lightly beaten
2 tbs marmalade
1 cup SR flour
1 cup Plain flour
1/2 tsp bicarbonate of soda

Method
1. Place mixed fruit, sugar, spice, water & butter in a saucepan & bring to the boil. Simmer for 5 minutes then remove & allow to cool.
2. Add the Bundaberg preservative, eggs and marmalade. Fold in the sifted flours & soda mixing well.
3. Place mixture in a lined 20cm cake tin.
4. Bake in a slow oven for approx 11/2 hours.
I used my 12 inch Bedourie oven with 24 heat beads. 10 under & 14 on top cooked for 11/2 hr

3 Ingredient Fruit Cake

Ingredients
1kg mixed fruit
600mL iced coffee
2 cups SR flour

Method
Soak mixed fruit in the iced coffee for 24 hours. Mix in the flour. Bake in a camp oven for an hour or until a skewer comes out clean

Boiled Fruit Cake

500g Mixed Fruit
½ cup sherry
1 cup water
125g butter
2 tablespoons golden syrup
1 cup dark brown sugar
1 teaspoon bicarbonate of soda
1 tablespoon boiling water
2 x eggs
1 cup self raising flour
1 cup plain flour
½ teaspoon mixed spice
¼ teaspoon nutmeg
1 teaspoon vanilla essence
blanched almonds for decoration

Method
Soak fruit overnight in sherry or brandy
Place soaked fruit, water, butter, golden syrup and sugar in a saucepan. Slowly bring to the boil then remove from heat and add bicarbonate of soda mixed with 1 tablespoon boiling water. Cool for 15 minutes.
Add lightly beaten eggs mixing thoroughly. Fold in sifted flours, spices and vanilla essence.
Place in a 20cm round or square cake tin. Decorate with almonds. Bake at 160°C for 1 ¼ to 1 ½ hours. Cool in tin.

SWEET POTATO FRUIT CAKE

1 ½ cups grated sweet potato (from about 1 large potato)
2 cups white sugar
1 ½ cups vegetable oil
4 eggs, separated
4 Tablespoons hot water
1 teaspoon vanilla extract
2 ½ cups sifted plain flour
3 teaspoons baking powder
1 teaspoon dutch mixed spice
¼ teaspoon salt
400 grams mixed dried fruit
½ cup chopped pecans
¼ cup bourbon for soaking the dried fruit

Beat the sugar and the oil in the large bowl of a stand mixer using the paddle attachment until pale and combined. Beat in the egg yolks until combined. Pour in the hot water and vanilla extract and beat until blended. Add the sweet potatoes and beat just until combined. Beat in the flour, baking powder, salt and spices until blended, scraping down the sides of the bowl as needed. Remove the bowl from the mixer and stir in the bourbon soaked dried fruit. Set aside.
Beat the egg whites to stiff peaks in the small mixer bowl. Fold the whites into the batter in the large bowl using a sturdy spatula. This takes a little elbow grease, but don’t be too harsh, you still want the eggs whites to retain some air. Fold until the whites have completely disappeared into the batter.
Scrape the batter into the prepared  pan, making sure it is evenly distributed and the top is flat. Pick up the pan and drop it on the counter a few times to knock out any air bubbles.
Bake the cake for about 2 ½ hours.  At 120C
