Somewhere buried deep in the forum is a recipe that Sooty put up once...its for a slow cooked steak as served by the Hogs Breath Cafe years ago. Part of the process requires the steak to be sous vide for 15-18 hours from memory.
Has anyone seen it around or know where it is ?

I cant help with locating the forum recipe SBB, but I know my chef mate does similar on occasion.
A thick steak is sealed in a plastic bag and immersed in water held at 62*c. for 8 hours.
Cooled/refrigerated and used within 3 days
Then briefly on a very savagely hot plate to develop a char and just heat through.
Will plate up m/rare.

I remembered it straight away.  I knew someone who used to work there.

I found the post that you linked to fairly easily Derek, I'm sure there was another detailing the method in more detail somewhere.
Could be wrong , often have been.
