get some good smoked bacon ribs from a continental small goods place that does proper in house smoking . split the ribs into ones or twos put them in just enough water to cover them slap on a lid and low simmer for 2 or 3 hours until tender mean while boil some spuds mash them with some butter and some chopped spinach and serve ( winter food ). back in the UK when i was a kid i loved these things so much i remember once my nana actually sending my a big shopping bag full of bacon bones for my birthday .
