Cajun Chicken and Andouille Sausage Alfredo

250 grams chicken thighs diced
200 grams smoked pork sausage sliced
400 grams thickened cream
3 tbsp. olive oil
1/2 cup grated parmesan
400 grams cooked pasta
2 tbsp. Cajun seasoning

Brown the chicken in the olive oil
Add the sausage and sautee
Add the cream and Cajun seasoning and bring to the light boil for 5 minutes
Add the cheese and simmer for a further 5 minutes.
Add the cooked pasta and stir through.
Serve with a garnish of halved cherry tomatoes.

Texan Style Chilli Con Carne

Ingredients
Chuck steak
A few bacon strips
2 onions
Carrots
1 capsicum
Garlic
Chilli powder
Ground cumin seed
Can of diced tomatoes
Juice of 2 or 3 limes
An ounce of milk chocolate
A litre of stock (beef or veg)
Tortilla chips
Salt and pepper

Method
Dice up the meats and brown in a hot CO. Add the diced onion, garlic, chilli, cumin and cook for a few minutes. Add tomatoes, lime juice, chocolate, broken up tortilla chips and the stock. Mix together and simmer for a couple of hours. Once it starts to thicken, add the diced carrots and capsicum. Cook for a further 15 minutes or so. Serve with rice

Shrimp Gumbo

Ingredients

1/4 Cup Oil
1/4 Cup Plain Flour
Prawns
Chopped Celery
Chopped Onion
Chopped Green Capsicum
Chicken Stock
3 cloves crushed garlic
1/2 teaspoon Cayenne Pepper
Salt
Black Pepper
Green Beans Chopped In Short Lengths
Sliced Green Onion
Chopped Tomato

Method
Cook flour in oil for about 12 minutes, stirring constantly until it changes to a brown colour.

Add in celery, onion and capsicum and cook stirring until they are soft.

Stir in stock, cayenne pepper, pepper & salt and garlic, bring to a simmer for 30 minutes.  Add in beans, tomato and prawns and cook for around 10 minutes.

Serve with rice
