Squid with Red Wine

Ingredients
Squid
Onions
Fresh tomato
Red wine (I subbed with chicken stock)
Garlic
Fresh herbs
Tomato paste

Method
Dice onions, tomato and garlic. Heat some oil in a camp oven, add the onions and garlic and saute for a few minutes. Add a handful of fresh herbs (I used thyme and parsley). Add the squid and cook for another couple of minutes. Add the tomato, a teaspoon of tomato paste, a cup of red wine or stock and a generous amount of pepper. Bring to a simmer for a few minutes and serve

Beef Stroganoff
From Day to Day Cookery

blade steak
onion
tomato
mushrooms
sour cream
salt and pepper
nutmeg
butter                                                                                                                                 
flour
water


Cut meat into pieces, roll in flour seasoned with pepper. Melt half of the butter in a pan ,add onion, cook until golden .remove from pan .
Add steak saute for 3 minutes, turning pieces so all are evenly browned.
Remove and keep warm. Melt remainder of  butter, add mushrooms and saute lightly.
Return meat to camp oven add onions mushrooms, tomatoes cut in chunks and water.
Simmer for 1/12 hour or until meat is tender.
Just before serving add cream and salt and nutmeg to taste.

Russian Crispy Chicken Fritters

These delicious chicken fritters are based on a Russian recipe. They are easy to make with a meat grinder, or buy pre-minced chicken. Watch this recipe being made in the
Ingredients
Serves: 4 
500g chicken breast
1 onion
1 large bunch parsley
1 egg
2-3 cloves of garlic, crushed
2 tablespoons mayonnaise
salt and pepper to taste
flour for coating

Directions
Preparation:25min  ›  Cook:15min  ›  Ready in:40min 
1. Mince chicken or pass through a meat grinder.
2. Roughly chop the onion and parsley and mince or pass through the grinder. Add to chicken.
3. To the mix add the egg, garlic and salt and pepper. Mix well, stir in the mayonnaise and mix again.
4. Roll large spoonfuls of the mixture in flour. Fry in a hot frypan in a little vegetable oil, 5-7 minutes a side, or until golden brown.
