Was going to roast ham hocks over the weekend, sauerkraut & Mash.

But a bit basic, any ideas

I've always turned ham hocks into pea and ham soup. That's about as far as my expertise with ham hocks extends Grin

I'm the same as Tadpole, only ever bought them smoked and used them in soup.
Can you buy them raw?
Sure they would roast up nicely. Similar to a pork knuckle in flavour I guess.

Turned out a treat, put us into a meat coma,
1.Soaked overnight
2. Scored and salted
3. Roasted on High 30 mins
4. Glazed with"Roasted Pepper and Cayenne Jam + brown sugar.
5. Turned oven down for 30 mins(not to burn glaze)

They look very tasty for sure.

I have only ever used ham hocks in pea and ham soup.  I have cooked pork knuckles before and find them great.

When serving sauerkraut with mash I like to put a little horseradish in the potatoes when mashing them.  Gives it that old authentic German taste.

That glaze sounds pretty good and I imagine would be great on corned beef and pickled pork.

They looked very good Michael, easy too, I might give them a try. Was going to suggest cooking them like Speck, something I did at a COG using a recipe I got from my Irish son-in-law, lots of root vegetables, and a cabbage all boiled up.
