Fish and Chips

Ingredients
Fish fillets
Diced chilli
Fresh herbs
Lemon juice
Garlic infused olive oil
Potato wedges

Method
Dice chilli and herbs. Place into fillets with a squeeze of lemon juice and drizzle oil over the top. Place in fridge. Meanwhile, preheat camp oven and place wedges in to bake. Heat up a barbecue plate and cook fish for a few minutes each side

Pulled Pork Wraps with Jalapenos

Ingredients
Boneless pork shoulder
Onions
BBQ sauce
Paprika
Vege stock
Pepper and salt
Coleslaw
Jalapenos
Flat bread or brioche buns

Method
Place pork shoulder and sliced onions into camp oven. Put about a tablespoon of paprika on top, as well as a teaspoon each of salt and pepper and a couple of teaspoons of stock powder. Squirt around half a cup of BBQ sauce on top and fill with water until the meat is about 3/4 submerged. Bake in a reasonably hot oven. After an hour, remove the skin, turn the meat over and cut into 3 or 4 pieces. Continue cooking for another 2 - 3 hours. Pull the meat using a couple of forks and mix with some BBQ sauce, serve and enjoy

Chocolate, Cinnamon & Chilli Cake

Ingredients


200 gms butter chopped
200 gms dark chocolate chopped
1 cup sugar
4 eggs lightly beaten
1 teaspoon vanilla
2 tablespoons plain flour
1 teaspoon cinnamon
1/4 teaspoon hot cayenne pepper

Method
Melt the butter and chocolate in a bowl suspended over boiling water. Stir in the sugar and vanilla set aside to cool for about ten minutes.

Slowly stir in the eggs then fold in the flour, cinnamon and cayenne pepper then pour into a 20 cm well greased cake tin that has the bottom lined with baking paper.

Bake in a a preheated camp oven at around 180 degrees for around 40 minutes or until it is firm to touch in the centre.

Allow to cool completely in the tin before removing.  Dust the top with equal quantities of icing sugar, cinnamon and cocoa.

Serve with a good dollop cream.

The Big Fella certainly enjoyed it.

Sate Chicken.

Slice chicken breast
Coconut milk
Crunchy peanut paste.
Olive oil
Garlic, chilli, oil combo (Mrs Wong)
Served with rice and corriander garnish.

Heat oil and chilli combo.
Add chicken and brow
Stir in 3 tablespoons of peanut paste.
Stir in coconut milk
Bring to a light simmer for 10 mins.

Chicken in Paprika and Cayenne Pepper Sauce

Ingredients

chicken thighs
3 large tomatoes
1 small onion
garlic cloves
1 tablespoon cayenne pepper
1 1/2 tablespoons paprika 
2 tablespoons olive oil
salt
1/2 cup chicken stock
Method
To prepare the tomatoes first cut them in half, then remove all of the seeds and juicy bits from the center of each tomato. Cut  into even-sized pieces and set them aside until ready to use.
In the camp oven heat the olive oil, and add the chicken. Allow each piece of meat to brown on each side. Remove the browned chicken pieces from the pan and set aside.
Add the onion, sprinkle a tiny pinch of fine sea salt over the onions and cook until they are soft and translucent.
Add the minced garlic and sauté for 2 minutes. Now add the chopped tomato  allowing to cook for about 5 minutes or just until the tomato bits begin to soften.
Add the chicken back to the pan, sprinkle in the ground cayenne and the paprika, a large pinch of fine sea salt, and pour in the chicken stock.
Cover the Camp oven and simmer for 25 minutes or until the chicken is tender and each piece is cooked through.
Uncover the Camp oven and simmer for another 10 minutes or until the sauce is reduced by half.
Serve with rice.

Chunky Chilli Beef & Cheese Pot Pie

Ingredients


Oil
500 gms Small Dice Stewing Beef (I used chuck)
1 Chopped Onion
3 cloves garlic
1 1/2 Tablespoons Ground Cumin
1 1/2 teaspoon Hot Cayenne Pepper ( More or less depending on your taste)
1/2 Teaspoon Ground Black Pepper
1 cup stock
2 Tablespoons Worcestershire Sauce
Grated Cheese
Puff Pastry

Method

Fry off the onion and garlic until fragrant, add the beef and cook until beef is browned.  Add the Cayenne, Cumin and Pepper and again cook until fragrant.

Pour in the stock and Worcestershire Sauce and simmer until meat is tender and cooked.  I did this for an hour and a quarter.

If at this stage there is still too much sauce thicken with a little cornflour.

Allow to cool

Divide meat between two ramekins and sprinkle over cheese

Cut puff pastry sized to come the top, cut a cross in the middle and glaze with milk

Cook in a preheated camp oven for around 35 to 40 minutes or until golden brown

Serve with a mash (this is potato and pumpkin mash) and peas

Enjoy with a glass of Merlot

Easy Chilli Chicken

Chicken 300g
Garlic Paste 1 tsp                  Gourment Garden Paste Garlic
black pepper ˝ tsp
salt ˝ tsp
Onions 2 med size
Capsicum 1 med size
spring onions 3 tbsp
Tomato Sauce 2 Tbsp
Green Chilli Sauce 1tbsp            Gourment Garden Paste Chilli Mild
Sugar ˝ tsp
Cornflour 1 tbsp + tbsp
Rice Flour 1 tsp
plain flour 1 tbsp
Egg 1
Oil 1 tbsp
Chopped Garlic 1 tsp                  Gourment Garden Paste Garlic            
Chopped Ginger 1 tsp                  Gourment Garden Paste Ginger
slit green chillies, seads removed
Water 1 & ˝ cup

Method
Diced Chicken Pieces, add 1 tsp Soya Sauce, 1 tsp Garlic paste, pepper and salt, mix and stand for 30minutes in the frigdge.
Chop Onions, Capsicum and Spring onions.
In a bowl, add Tomato Sauce 2 Tbsp, Soya Sauce 1 tbsp,  Chilli paste 1tbsp, Sugar ˝ tsp, and some water,and mix well.
In a bowl add Cornflour 1 tbsp ann 3 tbsp cold water and mix into a paste.
Into the chicken add  Cornflour 1 tbsp, Rice Flour 1 tsp,  plain flour 1 tbsp egg 1 and mix well.
Fry Chicken and set aside.
In a Camp oven add Oil 1 tbsp, when hot add Chopped Garlic 1 tsp, Chopped Ginger 1 tsp and saute for a few seconds. Now add slit green chillies, Capsicum, Onions cook for a few minutes. Add spring onions 2 tbsp, fry for a minute then add sauce and a little water. Add salt for taste and saute for one more minute.
Now add Cornflour paste and stir immediatley. Add 1 cup warm water and mix well.
Once it comes to the boil add chicken, and mix well. Add spring onions 1 tbsp and cook for 2 to 3 minutes.
