Turkey Burgers

Ingredients
Turkey mince
Onion
Egg whites
Garlic
Fresh parsley
Pepper and salt
Breadcrumbs
Bread rolls
Burger ingredients/sauces

Method
Dice onion and parsley finely. Combine in a bowl with turkey, egg whites, breadcrumbs, garlic and S & P. Make into burger sized patties. Preheat BBQ and cook for about 5 minutes each side until cooked through. Place in a bun topped with cheese, tomato, lettuce and whatever else you prefer Smiley

Spinach, Ricotta and Burger Turnovers

I didn’t really know what to call these however this will do.  The mince was on special.

Ingredients
Puff Pastry
Beef Mince
Diced Onion
Finely Chopped Carrot
Ricotta Cheese
Parmesan
Baby Spinach Leaves
Baby Roma Tomatoes
Oregano
Thyme
Basil
Sesame Seeds (Not in photo)
Milk

Method
Place mince in a bowl and add, onion, carrot, thyme, oregano, salt and pepper.  Mix together well then form into burgers and cook on a very hot grill making sure you caramelise them well on the outside. Set aside to cool.

While burgers are cooking wilt spinach in a pan and set aside to cool then chop it finely.  Place ricotta, grated Parmesan, spinach, salt, pepper and basil in a bowl and mix until well combined.

Take a full sheet of pastry, spread ricotta mixture on half then break burgers in pieces and place over then more cheese on top.  Fold over pastry and crimp into a half moon shape.

Glaze with milk, sprinkle with sesame seeds and pop them into the Weber at 200 degrees.

Cook for 35 to 40 minutes until golden brown

While cooking, cut tomatoes in half.  Cook onions in a little oil until translucent add tomatoes, salt pepper and basil and cook until onion is starting to caramelise.

Serve the turnovers with the onion and tomato

Nice crispy pastry and a beautiful interior of chunks of burger and a creamy ricotta mix.  Not bad.

My chicken roll.

Boned out the chicken thighs and flattened them out.
I added a chicken breast to bulk it out a bit, also flattened it out as well.
Mixed the stuffing mix, and added a egg and a mixed spice I brought from IGA into the stuffing. (I don't know what it was called, it was in their fresh spice aisle, I just brought a cup full of it to try.)
put the stuffing in the middle and rolled it up, trying to get skin out,  then put it inside a net ready to roast in the camp oven.
Added a few bits of butter, and some more of the spice on top  and roasted it with some vegetables.

Pork leg roast, I don't think anyone will not know what to do so here it is.

The second photo is my spacers so I can fit the 12” camp oven.

Bonnie done the veggies in our normal oven, I was to do them in the camp oven but I got sidetracked. Smiley
