Christmas Lunch/Dinner For Two

When I was a kid Christmas dinner was usually chicken roast.  Not the kind of chickens we have today though.  The chicken was out of the hen house and was an old fowl that no longer laid eggs.  They were tough but we enjoyed them

Vegetables were what was available and tended to be a lot of root vegetables.

I have attempted to recreate this however with a modern twist.

Chickens now come already plucked and cleaned and sealed in a plastic bag.

This one I boned out.  The only bone is the leg knuckle. This was left in to prevent the stuffing coming out.

Stuffing consisted of wilted spinach mixed with raisins that had been soaked in tea and pine nuts

The chicken was rolled then tied and sprinkled with salt, pepper, paprika and fresh rosemary and popped into the camp oven on a trivet

Today, due to limited space I stacked the ovens.  The chicken is in the bottom one and vegetables in the top. Vegetables are potato, sweet potato, pumpkin and parsnip.

Plum Pudding

2 Cups SR flour
˝ cup white sugar
2 tablespoon butter
˝ teaspoon mix spice
˝ cinnamon
2 tablespoon treacle or golden syrup
2 eggs
˝ cup milk
some rum
1 pkt of mixed fruit

Rub butter into dry ingredients, add syrup, 2 eggs, ˝ cup milk and rum mix well. Place in boiling water and boil 2 ˝   to 3 hours
Boil in cloth or tin

Christmas Damper

Ingredients
Self raising flour
Syrup
Glace cherries
Nutmeg
Cinnamon
Water

Method
Put about 3 cups of flour into a bowl. Add a tablespoon each of cinnamon, nutmeg and syrup. Put the packet of cherries in. Start mixing while adding water, using a knife to cut air into the mix. Keep adding water until a nice dough is formed. Put a layer of flour in the base of a preheated camp oven. Place dough into camp oven and bake until lightly browned and cooked through.
