My first go to recipes when camping is a good rich curry.  I never go camping without a selection of PATAKS Curry Pastes.

Camp Oven Vindaloo Curry

Ingredients

1/2 Jar PATAKS Vindaloo Curry Paste
Onion
800 grams Beef - I always prefer shin beef
Two tins diced tomato

...

Method
Dice beef and slice onion.  Place all ingredients in camp oven to make sure all ingredients and paste are combined.

...

Beef curry needs a nice gently long cook.  For this I had 4 heat beads underneath the camp oven and 5 on top

...

I cooked it for 2 hours to perfection.  Surprisingly using the same 9 heat beads

Served with rice, yoghurt and home made garlic naan bread

Roast Red Pork

Ingredients

Pork Shoulder
Lobo pork seasoning mix
Water
Salt

Method

Remove rind, sale the rind ready for crackling.
Mix the red pork mix with water, marinade pork shoulder in mix for a few hours.
Put pork shoulder into hot campoven, I put the rind back on top of roast at this time as well.
Basting the roast with the red seasoning mix while cooking..
When done serve with roast vegetable, and what ever you like.
I found I had to finish of the crackle separately.

Easy Chicken Dinner

Ingredients

Chicken Thighs
Tomato Soup
French onion soup
1 leek

Method

In the camp oven,  mix tomato soup, French onion soup, and chopped leek.
Place the chicken thighs in camp oven and then cook for an hour or until chicken is cooked through..

I served with mashed potatoes.

Beef and Red Wine Casserole.


500 grams diced beef
100 grams sliced mushrooms
200 mls red wine
Packet of Beef and Red mix.

Brown the beef in a 8 inch CO
Add the mushroom and saiutee.
Add the packet mix and wine.
Simmer on a low hear for about 60 mins till tender.

Serve with your choice of veges.

Bacon and Cheese Damper

Ingredients
Self Raising Flour
Bacon
Grated cheese
Water

Method
Put a couple of cups of flour into a bowl. Mix in diced bacon and cheese. Add water and mix until it forms a dough. Place into a camp oven and bake for about half an hour until lightly browned

Lamb Stew

Ingredients
Diced lamb
Diced carrot
Quartered mushrooms
Beef and Red wine casserole recipe base

Method
Preheat small camp oven. Throw in the lamb and cook until browned. Put the mushrooms in and cook until softened. Put the carrots and recipe base in, mix thoroughly. I put 5 heat beads under and 8 or 9 on top and let simmer for an hour, topping up with a bit of water a couple of times. Served with mashed potato and some damper my daughter made
