We often barbeque marinated pork ribs when in the bush and these sit nicely on a bed of steamed rice.
Method: About a cup of long grain rice for 2, drop this in a hot oven on a bed of coals. Add about a teaspoon of sesame oil and a half t/spoon of salt. Toast the rice, stirring constantly for about 3-4 mins. then add sufficient cold water to cover (it should really sizzle) plus "a little bit more". Put the lid on the oven, and if the fit is a bit loose, place a piece of alfoil over first to make a better steam seal. As the coals cool, the rice cooks by absorbtion and about 20 mins. does the job. 8) Might take a couple of goes, but when down pat you never boil rice again. And the sesame oil gives a very nutty flavour. I often add chopped coriander leaves for an Asian influence also. :) Happy cooking Mikel |
