Today, we decided to use our [url="http://www.rvingoutpost.com/specs.php?prodnum=1918&title=Skookie%20Cast%20Iron%20Skillet"]Skookies[/url] (mini cast-iron skillet) to make individual pizzas! We used refrigerated biscuit dough for the crust and then added our own toppings. Here's the one we made for Abby:

Hi Julie,
Did you have a lid on those? I use a standard bread dough (flour, yeast, sugar) for pizza, works a treat, cooked in a 15" camp........sorry DUTCH oven ;D ;D on a 12" pizza tray. Thin & crispy - roll it thin & prick a lot of holes with a fork Pan - roll it thicker & let it rise. easy!! The worst part about doing them up the bush is fighting the swarm of kids off to get a bit your self!!! Mick. |

Hi Mick! I did these inside in the oven (it's sort of ccccold outside here now to be doing too much outdoor cooking). But, even with that, I ended up making a "tent" out of aluminum foil to cover the top because the top was nice and brown, but the crust was not quite done, so the top would have gotten too browned if I didn't cover it. If I did them outside, I think I would use something like this:
My thinking is that I would have the skillet on the grate, and then to add the heat from the top, I'd put an aluminum tray over the Skookie and put charcoal, err, heat beads ;) on top to give it the added heat to "bake" properly. Obviously, I have yet to try that, but it sounds good in theory! ;D Julie |

Can you get CI lids to fit your skillet, like this one.
This one is actually a camp ov.....DUTCH oven lid ;D ;D ;D fits it spot on! That way I can use coals on top, makes a great omelete, 12 - 15 eggs! cooked from both sides at once. Mick. |

Mick, I don't think that would work on the little skillets I used. They not deep enough to put a regular cover on them as they're only about 1/2" deep.
