Title: Pumpkin Fruit Muffins ~ Part II Post by Derek Bullock on Nov 18th, 2007 at 2:45pm
A little while ago I bought a round muffin tray off American eBay. The lady I got it off told me that it was her grandmothers. Believe it or not I paid 99 cents for it but considerable more to get it to Australia. I always thought it would go well in a 12" oven and today, as I had some pumpkin left over decided to give it a go.
Here is a pic of it in a 12" oven I kind of overfilled them a little bit ;D Lifting the lid for a look at 25 minutes Cooling before taking out HOW'S THAT FOR CAMP OVEN TUCKER! |

Can you put something beside pumpkin in the recipe and don't say sweet potato. I am not a lover of either.. baked yes, any other way no. Muzz |

Good even colour on them Derek they look great.
Question: I notice you have the beads in a circle and not checkerboarded over the lid. Is that how they were cooked? How do you place the bottom beads? Number of beads would be nice also. You know I should be blonde ;D ;D ;D |

Have a look at the Charcoal Chart here http://www.aussiecampovencook.com/charcoalheatchart.htm This really is set up for the American style of cast iron camp ovens that are not very tall. Your Camp Chef Mulie is one. For that cooking of the muffins above there are 18 beads on top and 6 underneath. Through trial and error I am starting to believe with Heat Beads the rings are the way to go. A ring of beads around the outside of the lid and also under the oven. The ring under is just in from the edge of the oven (you can see that below). By the way, 18 Heat Beads just fit on a 12 inch oven. I think in lots of ways this directs the heat into the walls of the oven and you get an even heat. Now thats only a theory and I have no proof as yet. You can see the ring on this loaf of bread also and see a lighter browning around the bottom of the loaf. I only used 16 on top for this one. Was one of my trials but it was a hot day in the afternoon sun. I was talking to my ex-sister in law the other day and she reminded me that the pumpkin fruit muffin recipe was originally hers. But I was the first to cook it in a camp oven ::) In fact the photo right at the bottom is from the first time I cooked them in my Bedourie. You can see it in the background. muffins.jpg (192 KB | ) |

Thanks for the info and link, I have yet to use the new Camp Oven which is higher. Your bread looks good, I still have the sour dough starters in the fridge waiting for the adrenalin to kick in and me start it up.
