Ok.. my second camp oven cook, this one with heatbeads. Not much of a recipe, just lots of rosemary from my neighbours garden and a cut up lemon inside the cavity (I've seen them do that on cooking shows LOL). The chicken was lovely and tender, I couldn't believe how nice it was.
Thanks for the suggestion Billybushcook, was a great idea to do a chicken. I never do chickens in a regular oven as they are always so dry and awful, I gave up chickens 5 or more years ago, so I'm glad I've found a way too cook it this way. No Problem Voilet, One tip I have found, is the self basting birds you can buy or marinated ones are even better again, whether they be seasoned or not, another thing I do is gather up all the left overs including the frame & boil it up with a few left over vege's & strain it to make a stock, either at home or up the bush, I use this to make shepards pie, stir fry or something the next day. Cooked chooks definately make the best stock, especially out of a CO with some left over roast spuds & carrots. Good cook'n. Mick. |

I was envious of you guys & gals doing Roast Chicken in the CO and for some reason I have never done a chook before. So I had a go at it & You're right it does come up nice and tender.The veggies take a bit of getting used to (browning them).Anyhow here is the results.

Wow, I'm so impressed Sooty and Skiproosel. They both look fantastic. Skip I had visions of adding another camp oven (or even a skillet) on top when my chicken was cooking, so great to see that in your photo. Nice to see how others cook and arrange campovens/heatbeads/trivets etc. We can always learn from what others do and photos are brilliant for that. I want another chicken now LOL!!

I did a roast chook in my CO this week..... Got to say its the best Roast chicken I have had in many years. Its the method of choice from now on.
