Just a couple of things I cooked  for Australia day.

Chicken loaf with rice stuffing.

Three meat terrine.

A small ham with marmalade glaze and macadamia nut topping.

               maaaaaaaaaaaate! those meat dishes are the grouse. They would be an excellent addition to our Xmas lunch plates.

The Recipe: Three meat terrine.
250g good bacon(rind removed)
250g chicken mince
250g lamb mince
250g veal mince
150g pistachio nuts(chopped coarse)
1 egg
1 large onion(chopped fine)
1 clove garlic (crushed)
2 teas pepper corns
1 table spoon brandy
9cm x 22cm loaf tin
Combine all ingredients and mix well. Line loaf tin with bacon, add three meat mixture, cover with foil, place loaf tin in pan of water about two thirds up the side of tin, bake for about 1.5 hrs at 160c. Drain moisture from tin and cool and refrigerate.

Chicken Loaf:
Bacon to line dish or bowl
4 chicken breasts (slice chicken breast 1cm thick)
Seasoning of your choice( I used rice seasoning for no other reason than a family member can't have a bread based one, the rice is just a little harder to carve)
Line dish with bacon add chicken and seasoning in alternate layers, finish with chicken. (cook as per terrine)
Cool and refrigerate
