Title: Camp/Shepards/Game pie Post by BillyBushCook on Mar 16th, 2008 at 9:40pm
Don't know what exactly to call this....make your own mind up ;D
I often do this when we are up the bush, with the left over chicken carcass for stock.` it is basically a meat & vegi pie. Pie filling, Diced steak, mince (I used the left over duck meat, diced steak & some mince to fill in the gaps) sliced carrot sliced onion frozen or fresh peas 1 cup of chicken stock (I used fresh stock from the duck frame) 1/2 cup red wine or port (I used port) tomato paste 2 cloves Garlic (finely chopped) ginger (finely chopped) soy sce, salt & pepper to taste brown onions & raw meat with garlic & ginger, add carrots, when pan starts to simmer dry add port while HOT to lift the caramelised bits off the bottom & simmer until reduced by at least half, add stock, ready cooked meat, soy & tomato paste, Taste it!!!! & season accordingly. Thicken with a little corn flour. prepare pie tin with puff pastry & fill with meat / veg mix, top with mashed potato (slightly dry mash) & light spray of oil. bake HOT for about 40 Mins, Lamb mince would go well for a shepards pie, as would rabbit & duck for a game pie. I use whatever I have at the time so I will call it a camp pie :D :D but I have noticed they are better with a fresh made stock as apposed to the pre made stuff I keep in the freezer. Mick. |

G'day Mick,
I was thinking about all the great meals you've been pumping out lately and how happy your missus & kids would be. Then I was considering what else could be on the menu. Mate just save up all the leftovers for a few days ,mix 'em up and serve the natives rissoles :) that way they'll get a bit of each at the next feed. ;) With that good tucker and a big tribe there is probably none left anyway. ;D All the best Skip |

Yeh mate,
been giv'n the heat beads a flogg'n lately, Start'n to appreciate the ease of just firing up some charcoal instead of splitting wood then waiting for coals at home. I do all of the cooking (my wifes a shocker) so no matter what I'm cook'n it is just as easy to do it outside than in, & I get to play with my young bloke & do the odd jobb while I'm out there, She blames me for a weight problem, can you believe that!!!! :-? :-?
