Sorry about the name but it fits.
After soaking in a brine for a couple of hrs (I did this to remove a bit of "gameyness" & to remove some bruising from where I had shot him) cut Rabbit into serve sized pieces, (joints) roll in seasoned flour then brown the pieces in a little oil & put "booties" on the protruding leg bones so they wont pierce the foil. wrap in foil & add a tbsp, butter, herbs & a tblsp, coconut cream seal & cook in a hot CO for about 30 mins depending on the size of the pieces. serve with veg & pour the juice from the foil over for sauce! I actually made a red wine & onion sauce to go in the foil but it tasted like crap!!! :P so at a last minute I went for coconut cream & it worked really well. Iv'e done rabbit a lot of different ways but this was the most moist & tender I've had. |

I think the foil is the trick to keep the moisture in when baking... lean meat being rabbit or chicken or game birds tend to dry out wild ducks can be hard to bake.. browning first is a good idea and you can get the seasonings right...well done and looks to be a new season rabbit... not some old buck that you would give to your mother inlaw to knaw on. To take the wild or the gameyness out of a rabbit you have to remove 2 gland sacs situated either side of the tale bone. they are a yellowish color. Don't let this put you off. cheers Ron.

My bunnies are shop bought nowadays so would presume the gland sacs have been removed. |
