MUSHROOM DAMPER ROLLS

3 ˝ Cups SR Flour
1 ˝ teaspoons baking powder
60g butter chopped (or melted)
2 teaspoons olive oil
1 cup sliced button mushrooms
1 clove garlic crushed
˝ teaspoon thyme
2 green onions thinly sliced
420 can cream of mushroom soup
˝ cup milk
butter to serve.

1. Preheat oven to very hot 220C. (or heat beads and preheat CO). Lightly grease baking tray.

2. Sift flour & baking powder together.

3. Add butter rub in using finger tips until it resembles breadcrumbs.
OR Skip this bit and add cooled melted Butter to milk and mushroom soup.

4. Reserve 8 mushroom slices.

5. Heat oil in a medium pan and sauté remaining mushrooms, garlic and thyme for 2-3 minutes till tender.  Stir in onions.

6. Make a well in the centre of the flour and add combined milk and mushroom soup. Using a butter knife mix quickly to a soft Sticky dough.  Do not over mix.

7. Turn onto a lightly floured surface.   Knead lightly.  Divide into 8 and Roll into small rounds.

8. Arrange on baking trays lightly touching. Top each roll with a reserved slice of  Mushroom.  Flatten slightly.

9.      *Bake for 25-30 minutes until golden.  Rolls should sound hollow when lightly Tapped.
10.      Serve warm with butter if liked.
    *I used 9 beads in the Cobb and a spring form pan for 45 minutes.  


    I would like to try this recipe another time using just the rolls in the larger Bedouri and the camp oven mate to get a better brown top and less brown bottom.

Other suggestions for the recipe were to try adding grated parmesan cheese and chopped parsley to enhance the flavour.  A tomato damper could be made using tomato soup instead of mushroom.

Overall the flavour was a little disappointing.  The MOTH didnt even realise they were mushroom flavoured, he just thought it was a scone/damper!!!!!!  So  much for the decoration on the top  :D

Certainly looks nice Carolyn,

I'm not a huge fan of mushrooms but in some thing like that I reckon I would demolish them. I would like to have a go at the tomato one. Well Done.

Jono while I was waiting for the weather to improve I used the mushroom soup as a change from tomato in a chicken casserole in my French Cast Iron Casserole dish and we enjoyed the flavour.  I like all these types of things that can give some variety and travel well.  After seeing someone else using the Cobb I dragged it out again.  Its easy for me to use anywhere but I do think I get better results with the Bedouri and the coals on top.  I guess giving it a go is what its all about.

Regarding the pictures, there are only two as I think its pretty easy to make and there have been other pull-apart recipes which is really what I copied.  I have reduced these as I like having the writing on the side and work on a 21" (sorry I dont know the cm) screen and I dont know how many are now on larger screens or what this does to the actual recipe.

Its been a nice way to spend the day on a cold wet miserable kind of day.  The MOTH is busy making soup and he uses the pressure cooker for that.  Winter must be on its way  :D.
