Take the eye of bacon rasher (short rasher) and pan fry to your satisfaction.
Turn the bacon and pour pancake batter over the bacon eye.
When pancake is cooked on the first side turn it over.
You should now be looking at a pancake with a cooked bacon eye on it. (Both sides of the bacon are done)
When the 2nd side of the pancake is cooked, take it to a plate.
Then place either a fried egg or scrambled eggs on the pancake.
(eggs are an option)

This is from my Dutch heritage.

Easy to make and gives lots of energy at the start of the day.

Yummy.  Whenever any says they have Dutch Heritage I think of the Dutch Salted Licquorice I had given to me as a kid from the people who came here to dredge the bay.  Not many aussies liked it but I did.

:D Well TBF, I am not young, skinny, pretty, smart or rich  :D but yep "unique" might fit the bill, I will accept that..... and I did have extra salty one but I seem to remember that might have just been a bit much salt for me

LICQUORICE ? I would have to try some of this.

It's horrible Muzz.  ;D ;D ;D ;D

I tried it when I was over in Kosovo.  I worked with a lady from Finland and she loved the stuff.  An acquired taste I think.

Memory ain't what it used to be. Should have re-visited this post Before cooking brekkie  :)

I placed cooked bacon inside pancakes  :D

Anyway, tasted good enough to do again  [smiley=chef.gif]

Served with maple syrup

Maple syrup with bacon pancakes seems different. Must try it sometime.

I thought Aarts original post had maple syrup, but we all know what thought thought  ;D

The maple syrup goes well with bacon, an experience from a SA Cog when Judy served
