Title: Stuffed Peppers! Post by Mrs._Mik on Jun 1st, 2008 at 2:35am
This is how my mother made stuffed peppers when we were kids and is different from the way most folks make stuffed peppers! Hope you like them as much as we do!
2 to 2-1/2 pounds ground beef 1-2 onions, chopped 2 cloves garlic, minced 2 cans Tomato Soup 2 soup cans regular milk (to make tomato soup/sauce) 2 cups white rice (cooked as directed) Seasoning salt (I like Lawry's) Pepper 1/2 cup seasoned bread crumbs 8 peppers, cut in half lengthwise and seeded 1 cup Cheddar Cheese, grated Bacon, chopped into 1-inch pieces Brown beef, onion and garlic until done. Mix beef mixture with rice, bread crumbs and seasoning salt. "Stuff" beef & rice mixture into each green pepper half. Place in a 9x12 baking dish (sprayed with Pam). Mix together tomato soup and milk. Pour over peppers. Cook at 350 for approximately 45 minutes, basting occasionally with soup "sauce". When peppers are done, add chopped bacon on top of each stuffed pepper. Cook for an additional 10 minutes. When bacon is cooked, top each pepper with cheddar and let melt. One thing I like about this recipe is that you use less peppers because you slice them in half to stuff. The bacon and cheddar also add to the great taste of these peppers! Enjoy! Julie |

That looks very yummy Julie. Could easily be done in the camp oven as well.

Thanks for the recipe Julie, I have made some of your meals & they have been excellent so this is a must try too. I do make stuffed Capsicums also (Peppers) but have always done them by just cutting the top off. I then poach them in a tin of Tomato Soup. The Bacon will be a special edition. Thanks!

Skip, I've been told that:
Capsicums = peppers in varied colours Mince - ground meat (beef, lamb, chicken, pork......) So, what do you say? :-/ |
|
Title: Re: Stuffed Peppers! Post by skiproosel on Jun 1st, 2008 at 9:04pm
Hi LK, I'd say your right. Aussies call any Bell Pepper regardless of it's colour a Capsicum.
We usually say "Red Capsicum" Green Capsicum" or "Yellow Capsicum" quite clear :) And meat that has been through a grinder or mincer as it is known here is called just that "Mince" it could be any of those you listed or sausage mince!. Again we say "Pork Mince", "Chicken Mince" or whichever we are referring to. We like to keep our allies on their toes. [smiley=coolgleamA.gif] All the best Skip [smiley=sailor.gif] |

& burgers, it's a word beginning with ro....... or is it rissoles?
Was I getting myself confused with your name? :-/ |
|
Title: Re: Stuffed Peppers! Post by BillyBushCook on Jun 2nd, 2008 at 10:34am
LK,
Rissoles / patties......it becomes a burger when you put it on a bun with salad, Oh & beetroot of coarse! ;D ;D Mick. |

Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 2nd, 2008 at 1:09pm
Mick, I don't understand what you're saying about beetroot.
BTW, why not just say beets? :-? |
|
Title: Re: Stuffed Peppers! Post by BillyBushCook on Jun 2nd, 2008 at 1:21pm
Beets the heck out of me????? ;D ;D ;D ;D ;D ;D
Aperantly it is an Aussie thing to put beetroot on a burger or sandwich, we have a Sth African working with us in my home office & it drives him nuts watching me put it on a sandwich. Why not just call them beets???... cause you can root a beet but you can't beet a root ;D ;D ;D ;D ;D ;D Mick |

Title: Re: Stuffed Peppers! Post by Derek on Jun 2nd, 2008 at 1:25pm
We have funny names here for some things. When I first came to Oz as a kid we used to call them beets. In the UK you get red beets and sugar beets. That has all changed now though as they call them beetroot.
Here we also call swiss chard ........ silver beet for some reason. |

You put BEETS on a burger? Really?

Actually Julie, even McDonald's got in on it with their McOz Burger. It too had beetroot in it. I don't think they make this one anymore but here is a pic someone put up on the net http://www.travelpod.com/travel-photo/tracyleigh54/tracy_does_oz/1137001500/img_0184.jpg/tpod.html You can see the beetroot on top of the tomato. |

Weirdo's hey! None of my American mates have a burger now without sliced beetroot, they are true converts.
When I lived in the US I saw 'em eating sausages, eggs & bacon with pancakes and maple syrup, on the same plate. I'd ask for my Pancakes on a separate plate and everyone at Denny's looked at me as if I were the weirdo. [smiley=wacko.gif] All the best Skip PS Great thread Julie! |

Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 3rd, 2008 at 11:34am
Well, heck, why the dickens do you want your pancakes ona separate plate? You're, I repeat you are going to wash two dishes, when you don't have to? Not someone else, you would do this?
& do you say potato root, carrot root, parsnip root? Beets are a root vegetable, the same as potatoes or carrots or parsnips? BTW do you all eat beet greens? :-? |
|
Title: Re: Stuffed Peppers! Post by Derek on Jun 3rd, 2008 at 11:38am Little_Kopit wrote on Jun 3rd, 2008 at 11:34am:
I do but as a salad green and not cooked |
|
Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 3rd, 2008 at 11:51am
I can 1/2 way understand the salad thing. That's more common here. Often with the salad as a first course, not a part of a one course meal. Unless I have a salad as a snack, I don't use the separate bowl or plate or..... That's washing more dishes than you have to.

Title: Re: Stuffed Peppers! Post by Mrs._Mik on Jun 4th, 2008 at 2:07am
OK, so how do ya'all cook the beet? Do you just boil it? Do you slice it first and then cook it, or cook the beet whole and then slice it?
I'm assuming it's cooked, and not raw, as beets are WAY too hard to eat raw, right? I love beets, and so does Greg and the girls, but I'm not sure I could convince them to try one on a burger! :D Derek -- that's a great picture! I'd never have believed it if I hadn't seen it! :) Julie |

Title: Re: Stuffed Peppers! Post by Derek on Jun 4th, 2008 at 10:11am
Boiled whole, cooled then sliced.
The canned ones are in a type water/sugar/acid brine. |

Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 4th, 2008 at 10:15am
Do you mean that people put a pickled beet slice on the burgers?
OH, YUK!!!!! Fresh beet, I could tolerate, but pickled beet, :( :'( |
|
Title: Re: Stuffed Peppers! Post by Derek on Jun 4th, 2008 at 10:31am
Believe it or not there are not a lot of fresh beetroot sold here. Most is in cans.
|
|
Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 4th, 2008 at 11:52am
Fresh is fresh, raw. Canned is never fresh.
Read your labels. I'll bet the preservative chemicals are worse than here. Here, the Canadian government has publicly questionned the quantity of salt in 'prepared' food, which canned foods are. People with heart problems find canned items taboo here. 8-) |
|
Title: Re: Stuffed Peppers! Post by Derek on Jun 4th, 2008 at 12:03pm
Yep you are right there. Always a lot of salt in canned food.
Just to give you an idea I have a small can of beetroot here and the salt content is listed as 280 milligrams per 100 grams. How would that compare with over there. The preservative is listed with the code 260 which I know is acetic acid but there is no requirement over here to list the quantities. |
|
Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 4th, 2008 at 7:03pm
I can't cite chapter in verse on details, but I know those other chemicals can be just as risky to some.
:-/ |

Title: Re: Stuffed Peppers! Post by Derek on Jun 4th, 2008 at 7:12pm
How does the salt rate compare with over there LK????

|
Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 4th, 2008 at 8:24pm
I can't really say. I try to avoid food with additional processing, given that I'm on a low salt diet.
Even from one ranch salad dressing to another, the amount of sodium can vary more than 100 mg per TBL. /15 ml. What I bought yesterday has 135 mg per TBL/15ml. I've seen as high as 340 mg. of sodium in dressing. I did buy the lowest salt content in 796 ml can of tomatoes this week. That was 240 ml per 1/2 cup/125 ml. I certainly saw as high as 375 for the same. I've heard about a low salt brand of processed frozen foods, but they were very heavily startches and not much of other veggies. & the usual thing probably applies. Like if you have low fat, you have other additives for 'flavour', which do you more harm than the fat. Have you all been advised that it is easier for the body to absorb and make use of butter than margarine? 8-) |

LK, they are very sweet, I have grown, boiled & preserved my own in the past with 2 cup vinigar to 1 cup sugar, yummy! can eat em' anytime! Mick. |

Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 5th, 2008 at 9:23am
Sorry, Mick, that combo of flavours (& I too have made a sweet beet pickle with onions) just ain't to my taste.
Somewhere between teen years and travel job in my late twenties, I learned something about mustards. As a teenager, mustard on burgers or hot dogs was ok. After being introduced to central EU ethnicities, my taste says, never ever again for yellow mustard. I think pickled beets with burgers is the same thing. Un-acquired taste. ;) |

Title: Re: Stuffed Peppers! Post by BillyBushCook on Jun 5th, 2008 at 10:41am
You should be a little more open minded LK,
When / if you get over here you should as part of your Aussie experience, go to a typical corner shop / fish & chip shop & order a works burger, it will leave those disguisting McDonalds / Burger King type burgers for dead, with or without beetroot, the're not even in the same food group!!!!!! Mick. |

& who the heck said MacDonalds is an essential part of the Aussie eating experience.
'T'ain't like eating in a small town pub, is it? ;) |

Title: Re: Stuffed Peppers! Post by poddy dodger on Jun 5th, 2008 at 1:27pm
I often bake beetroot in the CO along with the spuds. Peel and cut them in half as they take a little longer than the potatoes. After an hour of cooking I put my pumpkin (unpeeled) in and leave the lid askew to let the moisture out and crisp the vegies up. If I have time I par-boil the spuds before hand, rake them with a fork and rub olive oil over them, makes them golden and crunchy. AAAh food.

I think you missunderstood me LK, I consider McDonalds to be the lowest form of sustainance there is, but it did come from your side of the planet! Actually eating in a small town pub is some of the best meals I can think of while travelling, great big jucy steaks & salad with chips apart from simply pulling up beside the road on a stock route (the long paddock) in the middle of nowhere & break out the Camp Oven. I was really talking about a hamburger from an Aussie fish n' chip shop, You'll not get a better, more fresh or nourishing hamburger!! Mick |

Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 5th, 2008 at 3:52pm
& likely something that really is a hamburger. Not sure what MacDonalds serves really has meat in it.

Title: Re: Stuffed Peppers! Post by Derek on Jun 5th, 2008 at 7:46pm
McDonald's burgers over here have 100% Aussie Beef in them ;)

Title: Re: Stuffed Peppers! Post by lance on Jun 5th, 2008 at 10:43pm
Yep Derek, all the beef is 100% Aussie.
But that probably only makes up about 10% 0f the total content. Then we have the fillers and the mixers and the like. Lance V00104 |

Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 5th, 2008 at 10:53pm
Thank you, Lance.
I know of a case where, MacDonalds had to conform to local architectural style (Amsterdam), but I've never heard of them changing their product formulas. I mean, what can you expect from a company that wanted to legally claim the exclusive right to the name and graphic displays (hearldry) for the Scots name MacDonald? For real, it caused much media attention in the northern Anglo hemisphere. MacDonald's burgers sure don't taste like they have a lot of meat content to me. :-? |

Title: Re: Stuffed Peppers! Post by Derek on Jun 6th, 2008 at 5:06pm
Actally no.
All McDonalds meat patties in Australia are 100% beef with no additives whatsoever. Not saying thats very good lean beef or where it is cut off the animal but it is 100% beef |
|
Title: Re: Stuffed Peppers! Post by Little_Kopit on Jun 6th, 2008 at 7:09pm
Derek, my understanding of MacDonalds corporate mentality is such that I have to ask you for some documentation for that.
Among other things, I'm sure they use salt. So, let's start with 99%. :-? |

http://www.mcdonalds.com.au/PDFs/IngredientListing.pdf Look at the ingredients - 100% Beef. The rest of the burger has got all sorts of things in it but the meat patties are true. I have very good friends that outright own their own McDonald's store and in fact have become millionaires as a result because they have the only store in a rather large area. It was a big issue when they started it here in Australia and the watchdogs took them up on it and did heaps of tests but the answer came back every time ~ 100% pure beef with no fillers or additives. |
