Potato Sweet potato (orange) Pumpkin (jap) Carrot Onion (1/2) Capsicum (1/2) Veg that I would leave out next time: Zucchini Unbaked: Baked: Barb |

Don't leave it out cause its a great veggie. Just don't put it in until around half way through cooking then it won't go all mushy <---- speaking from experience cause I have done that to.
But it certainly looks yummy Barb. Good for you. |

Cooked the roast vegies on Friday night. It was such a gorgeous night to be pottering around outside.
Then Saturday afternoon, now having 2 COs, I cooked the apple crumble and a vegie bake. I am stoked - everything has been edible so far! Can't decide if vegie is vegie or veggie! Barb :) |

Nice one Barb, I think veggies roasted like that are about the best thing to eat. I often have a big plate of roasted veggies with no meat.

Good one Barb,
with the softer veg like Zuccini, Brocolli & Cauli......yes I did say Broc & cauli, they come up great in a seperate oven done without oil in the bottom & cooked extremly hot!!! coals from the fire job! The other thing with doing veg of any kind is I don't like to put too many in. a single layer across the trivet, otherwise they can almost steam them selves, this eventually leads to wanting bigger ovens......you have been warned ;D ;D ;D But a nice job just the same, I can remember a few of my first attempts about 16yrs ago, one of which was a damper we ended up using for target practice!!!!!!! :P :P :P Mick. |
