Title: Zucchini Slice
Post by TBF on Aug 22nd, 2008 at 1:21pm
Zucchini Slice

375gms grated zucchini
200 grams of grated carrot for colour
3 bacon rashers finely diced, no rind
1 cup SR flour
5 eggs
1 large onion diced
1 cup grated cheese
˝ cup canola oil
S & P to taste
Curry powder to taste

Add all the ingredients to a bowl and mix well. Pour into a greased shallow tin (25 - 50 mm deep)
Place on trivet in a moderate CO for about 30 – 40 minutes.

Cut into bite-sized fingers or squares
Great as an appetiser.

This will be one of the dishes I serve at Broke.

You folks speak a funny kind of English down there!   ;)   ;D   Can you tell me what a "rasher" is?

I've got the rest of it, but "rasher" has me puzzled!   :)

A rasher is just a slice of bacon..thin or thick.

I wish I'd found this sooner TBF I too cooked this at broke but in small individual pie tins but after reading your recipe I think they missed out somewhat at least we are keeping the legacy alive  :) " Broke zucchini slice "

Good to see mate.
We often have it for dinner at night, served warm, chips from local take away and a salad beside.
Like you wrote, great chilled for smoko next day.
