I've been roasting beetroot since I saw it on "The Cook and the Chef" on the ABC. Do it  in your oven with the potatoes but not touching else you'll end up with pink spuds like I did.
Bloody bewdiful.

I,ve never tried it,do you have to boil it first,or just like spuds?

G'day George, I always par-boil my spuds and beetroot (but not together) before I bake them. Let your spuds cool a bit, rake them with a fork and spray them with oil before putting them on a trivet with the beetroot in yer little black pot.
I'm not giving away any more tips or you'll all be as good as me. lol  [smiley=taz.gif]
