Title: Soup to Stew

:)Folks thought I would share a recipe with yousall, this has probably been done to death ;D somewhere, but this is ours, at home its just an onion soup, but when camping my boys call it "typhoon in the shorts" :o.

Home soup ingredients

4-6 pork spare ribs (No bone)(or pork belly if you can afford)- cut into cubes
6 cloves garlic - halved
4 Large onions - quartered and sliced
5 cups chicken stock (Continental low salt)

Method
Fry off the pork and garlic in the CO until well browned and fat has liquefied.
Add onions and fry for about 15 mins, put lid on and sweat all for 30 mins.
Add stock and cook for as long as you like with lid on, longer the better.

Now if we  are in the bush, I will use what ever meat is on hand or left over, I will add carrots & celery at the same time as the onion, once the stock has been added and it is simmering, I will add what ever the boys want with it, potatoes, rice, or noodles.(If using rice be carefull reheating as it does not last as long)

Best on the second day, keeps the tent warm at night, I have made this with chorizo bangers last time we went bush.
