Hi All! Back from Booloumba Creek where the weather was perfect, the creek was full and the surroundings beautifully green!

I cooked my first ever stew in my new CO and it was a resounding success.  I pre heated the CO, and browned the meat.  I forgot to take some flour with me, but thought I would just improvise as I went.  Then I threw in chopped onions, celery, carrot, potato and pumpkin.  I splashed in some cabernet merlot and a little bit of water, salt and pepper then put the lid on and let it cook.

I stirred it once during cooking and could see it was cooking quite nicely.  

At the end of almost 2 hours I thought I might need to make up some gravy mix to thicken it, but the pumpkin had broken right down and actually thickened the stew instead.

It was served with some peas and corn and between the five of us there was nothing left over - a couple of us even had seconds!

The key is slow, with even heat, and that applies to most CO cooking.
