I got this emailed to me today announcing Doyles winter special is on again. If your ever in Sydney during the winter its a greal deal at a top place. I am not particularly a fish lover but the chowder is to die for.
I thought this recipe would go well in a camp oven if you can afford the ingredients, bit puzzled about the 1 cup of butter, not for the cholesterol counters. Eva Newtons Fish Pie Recipe This recipe was one of Alice Doyle's mother's favourite recipes! Why don't you give it a try! 1kg (2lb) thick fish (cod, gemfish, snapper or jewfish for example) 1 dozen scallops 6 large green prawns - peeled 1 dozen oysters (fresh or bottled) 1 teaspoon salt freshly ground pepper nutmeg bay leaf pinch basil 1 cup melted butter 500g (1lb) shortcrust pastry or mashed potato grated cheese cream paprika Put fish, scallops and prawns in a saucepan and add enough water just to cover. Cook for 8 minutes. Put oysters in a saucepan, cover with a little water. If fresh, shell and add juice from shells to pan too. Simmer for a few minutes. Divide the fish into large flakes and place in a dish. Lay the oysters on top, season with salt and pepper, nutmeg and other seasonings. Add the melted butter and cover with shortcrust pastry or mashed potatoes. Sprinkle cheese on top, wipe over with cream. add sprinkle of paprika and bake until golden brown (serves 5-6) |

I have "Alice Doyle's Fish Cookbook" book 1979 with three fish Chowders. Classic cook book. Some great Batter recipes too. KD |

Doyles-- hmmmm used to go there a lot when stationed at H.M.A.S Watson and used to visit lady Jane Beach quite a lot. The fish & chips were brilliant and it has been difficult to equal or beat them since.
