Purchased a set of 3 small bar tins from BigW yesterday with the idea of making of making three small cakes (one to eat & two to freeze for later). Here are the recipe & the results. Tasted good.
Date & Nut Cake 1 cup chopped dates 1/2 cup chopped nuts (walnut, pecan) 1cup boiling water 2 cups SR flour 1 cup sugar (or less) 2 tbs butter 1 tsp bi-carb soda 1 tsp vanilla Mix dates, bi-carb soda & butter with boiling water. Add remaining ingredients & mix well.
