Title: Creamy Lamb Stew
Post by Mackerel Whisperer on May 30th, 2009 at 8:47pm
Tried this tonight, Sort of just made it up as I went along. Was really nice.

Lamb Pieces
1 x can tomatoes
punnet cherry tomatoes
1 x small tub tomato paste
onions
spuds
carrots
200gm sliced mushrooms
S&P
garlic
rosemary
1 cup port
1 x 500ml cream
3 x cups beef stock

I browned the lamb first along with the onions & garlic. Add the rest of the ingredients and allow to simmer for an hour or two. Thicken with a bit of cornflour. Serve. Thats it! Easy & Delicious.

(I needed a nice loaf of bread but ran out of time  :'()

Really great comfort food, I did similar last night with chicken, without the port and cream to make it diet friendly  :D

Beautiful Jono, don't you love the way Lamb takes on so many flavours. Another nice feed mate and well worth trying.

Very good Jono.  I see the Bedourie lid getting some use there.

Thanks for the great recipe. We used this for our first stew in the CO. Used beef instead of lamb, put some celery in, 4 cups of stock instead of 3 and a cup of port, and sweet potato instead of normal potato because we had ours with mashed potato. It turned out fantastic ( I might be a tad biased) Made enough to feed a small army so i'll adjust amounts to suit next time.

Ok its on. Using heat beads, not sure about the quantities though, we used 1400g diced lamb, 3 potatoes quartered, 2 big brown onions halved and sliced (I love onions), 3 garlic cloves sliced, 2 medium carrots sliced, a normal size tin of Italian tomatoes 400g. The rest is as stated in the recipe. Its enough for 2 meals of my 2 adult 2 kid family. It looks good even before being cooked, its going to be fantastic. ::)
