We actually bought one last week....cooked a curry in it on Saturday night......the meat just melted in our mouths!! I will certainly try some of those recipes Carolyn ....dunno about the ostrich though :-? We will be taking it to Aratula to cook in :D

Some more interesting side dish recipes on that site, lot of breads and a dumpling one.  For the no knead cook I thought this looked interesting and have listed it for something to try sometime.  Personally I would just melt and mix the butter/marg.

Pot bread

Ingredients
1 kg cake flour, white bread flour or wholewheat flour
15 ml salt
10 g instant yeast
lukewarm water
15 ml margarine

Method:
Sift the dry ingredients together. Add sufficient lukewarm water to form a stiff dough. Knead the margarine into it piece by piece. Knead until the dough is elastic. Grease a number six black pot and its lid with margarine. Place the dough in the pot, cover and leave in a warm place until the dough has risen and fills the pot. Place the pot over warm coals (the fire should not be too hot) and place a few coals on the lid. Bake for about an hour or until the crust is golden. Turn the pot every now and then.

Just wondering how you seasoned it SBB and SBL, Falkirk recommend:

Curing Instructions - Potjie Pots ::
Fill 2/3 of the pot with water.
Add 200 ml vinegar and boil for 1 hour.
Let the pot cool down and empty it and use sandpaper as a scourer.
Repeat the above process, this time adding vegetable leaves ie. Carrot, potato skins, cabbage etc instead of vinegar. Again scour the pot until it is smooth as you can get it.
Wash and dry it well and grease the insides with cooking oil. Always wash the pot thoroughly after use and grease immediately to prevent rusting.

THAI STYLE PRAWN POTJIE - Serves 4 - No. 2 Potjie

20ml butter
20ml olive oil
1kg prawn meat
1 large onion, chopped
1 red pepper, deseeded and sliced
1 clove garlic, crushed
500g button mushrooms, sliced
250g Jasmine rice
1ml salt
Freshly ground black pepper to taste
1ml cayenne pepper
2ml turmeric
5ml lemon grass or two fresh storks, bruised
400ml coconut milk


Cook this dish slowly over low coals.

Heat butter and oil in the cast-iron pot and sauté onions, peppers and garlic until onions are transparent.

Season with salt, black pepper, cayenne pepper and stir in the rice.

Gently heat coconut milk, lemon grass and turmeric.

Layer prawns and mushrooms on top of ingredients in the pot and add heated liquid.

Cover with lid and simmer slowly for about 30-45 minutes or until rice is cooked.

Serve in bowls.

Sounds good for The Gorge......................... ;)

Came home today to find a message on my Phone Message Machine from Satooz (I worked out eventually).
Played it several times and could not understand a word. Then thought, hang on that sounds South African, played it several times more and could just distinguish "order how many pots".  Could not understand her name or the company name, but the number was fairly clear, so on an instinct called the number.
I did notice this when placing the order, it glitched and I had to press the order button three times to get my "Cart" to order.
She had three orders for three of em................
Told her I only want one!
Phew lucky she did not debit my MasterCard x 3!
That heavy Afrikander accent is just amazing!  
I also asked her how to pronounce Potjie, still none the wiser!  SBB any advice?

In South Africa, a potjie, directly translated "small pot" from Afrikaans, is a traditional round, cast iron, three-legged (tripod) pot. It is similar in appearance to a cauldron and is usually black. It is used to cook potjiekos over an open fire.

Potjie can also refer to the technique of cooking potjiekos. This tradition originated in the Netherlands and was brought to South Africa by Dutch immigrants. It persisted over the years with the Voortrekkers and survives today as a traditional Afrikaner method of cooking.

Potjie is also used as an abbreviation of potjiekos. Among the South African tribes these pots also became known as phutu pots.

Just in the middle of seasoning my Best Duty South African pot.
And made an interesting discovery!
A Cobb Cobblestone fits between the legs perfectly!
So it is boiling away with Cobblestone power ;)
The Cobblestone needs lifting up a tad, I used three small rocks.
Interesting to note in the Falkirk website that the largest Potjie pot is 30 Litres - enough to feed the whole tribe or perfect for COGs ;D ;)

On the Cobb Website they say

They’re hot! One Cobble Stone equals twelve BBQ beads, so be sure to use a Cobb Roasting Rack for roasts. It’s otherwise too hot. Great for BBQs, stir-fry and breakfasts.

Only trouble with that is the heat is concentrated to the size of the stone and unlike Heat Beads you cannot spread it out.

After three seasonings as per above, we finally cooked with our Potjie this evening in the Fire Pot pictured above.  Pea and Ham soup!  With a big ham hock, 2 litres water, half cup of green split peas, cup yellow split peas, two carrots, half a leek sliced, and stick of Celery fine diced, onion rough shopped.
Went for two hours over Cocochef Briquettes mixed with charcoal!
Turned out brilliant, already tried some, the meat just fell off the bone.
Now Beryl who is on holidays has the job of chopping the meat and seasoning/thickening Monday before I come home from work. As other shift Chefs do for each other.
btw each time I use my Fire Pot I like it better and have ordered another.

I just should have picked one up in Euccha when we were there.  Would be great for Sparky to make soup in.

Well there is no reason to join Facebook David unless it interests you, my main interest there is sharing photos with my family and friends.  

A lot of web sites and common interest type stuff seem to have opened up a page on facebook.  Its mostly not all that active yet and so far I have won a new phone and from the R M Williams site a book  :D

This picture caught my eye as I just love the shape as I said and it was from one of the usa members and I thought that interesting as the plough disk and horse shoe stand.

When I questioned it I was pointed to another website http://www.camp-cook.com/forum/ which I think is run by another member in here and has a heap of information as well.

Its no wonder I dont seem to read as many books as I used to  :D  :D

The $500 Samsung mobile I won was purely the luck of the draw CD.  It was a relatively new site and a promotion stunt that not many entered.  The competition they held prior my No. 2 daughter won two tickets to some pop star concert next year from memory worth $300.  I think there was some disappointment at the number of entries and they dont seem to be coming up now.

A couple of the camp oven companies held random draws also for camp oven stuff by submitting a photo or recipe.  I wasnt lucky there.  One is having a smoked food recipe at the moment but thats not my thing.

IDOS advertised their opening a new website via their facebook page and I am in the top 5 but falling behind in the poll.  I didnt go in this for the competition believe it or not just put a couple of the simple things I cook and photograph and of course they are old news for this site.  

The R M Williams site had six or so books When Wool was King and it was a matter of writing why you wanted one and I think they only had 10 entries.  I grew up with sheep in the back yard  :D

So now you know CD get to it, the best thing of all its all free to enter.

It gets me out into the big wide world and I have already had a contact and the possibility of picking up a potjie next weekend wheeeeeeee.

The power of networking!!!  I didnt even have to introduce myself today at the Bulli Show the friendly folk from Camp Cooking Club knew who I was before I opened my mouth  :D  :D even though John who I had been "talking" to wasnt there.  They had a range of sizes but Sparky refused to carry any bigger than the 2 which I had ordered and is just right for us but.........the bigger ones called to me though but I had to back off this time.

Was one of those there also KD but I have a small I think Lodge LOL its in a box somewhere I best check it out might be going up in value, I dont need a little one.

Was so good to be able to buy something and not pay $ exchange and over the top postage.

I googled a how to season and I was told verbally how to do it.  I was about to get the beads fired up but a storm blew through and I didnt want to be ducking in and out of a storm.  Tomorrow is another day.

Just received a little old Potjie from eBay.
About the same size as the 6" Lodge.
"Made in South Africa Best Duty 1/2"
So not a Chinese one like my # 2.
It measures 13cm x 14cm.
Luv it!  Needs some TLC.

I have some Falkirk's too but I can't tell the difference when using them.

The Best Dutys are made in two halves and then joined and sometimes it may be necessary to run a tungsten burr over the top section so the lid seats well (they get an uneven knob & the lid will rock on that).

Just get one or two Jack you won't be sorry :)

Jack I have a No 2 and No 4 Best Duty.....cant comment on other brands as I have never had or seen others.
In my opinion they are pretty rough cast as Skip has already mentioned...having said that they are a good little pot.
When I first got mine i attacked the inside with an air die grinder with one of those sandpaper wheels attached to it........got it smoother than the factory finish and it then seasoned up well. If you hunt around a bit you can pick them up a  bit cheaper than the mob at Satooz want for them. Some of the difference in price is due to postage costs ,,,,,but not all. A few shops are starting to stock these now so hunt around.

Interesting comment, I have worked in three boarding schools kitchens in Toowoomba and an army base at Oakey, all cooking for 200+.  
Dont tell me TBF is doing similar work?  I know he does night shifts.
Or do you refer to his family cooking?

All my catering is for the love of it.
No reward, other than a thank you.
Have travelled to many parts of the country to cook for groups.
Largest is just 80 people for a long weekend.
Cooked for 60 for 7 days in Tasmania.
2 gas rings, 1 CO, a 200 litre drum, 60 litre drum and a big fire that went for the 7 days.
Mate of mine took video and photos and have yet to see them.
Will hunt it down

I sent this on to Jack after he bought his Potjie, not sure if this was the method he used but I used it for my # 2 Best Duty and it turned out well after three sessions:

Curing Instructions - Potjie Pots ::
Fill 2/3 of the pot with water.
Add 200 ml vinegar and boil for 1 hour.
Let the pot cool down and empty it and use sandpaper as a scourer.
Repeat the above process, this time adding vegetable leaves ie. Carrot, potato skins, cabbage etc instead of vinegar. Again scour the pot until it is smooth as you can get it.
Wash and dry it well and grease the insides with cooking oil. Always wash the pot thoroughly after use and grease immediately to prevent rusting.

gday mate, i bought the pot at a south african store/cafe  in hawthorn rd caulfield (i found it by googling south african shops in melbourne or something similar)

it was a best duty brand and it cost $100, which i thought was a good deal

Heres are a couple to try in your Potjie Jack Ive made them both a couple of times and they are pretty good

Thai Style Prawn Potjie - No. 2 Potjie - Serves 4
20ml butter
20ml olive oil
1kg prawn meat
1 large onion, chopped
1 red pepper, deseeded and sliced
1 clove garlic, crushed
500g button mushrooms, sliced
250g Jasmine rice
1ml salt
Freshly ground black pepper to taste
1ml cayenne pepper
2ml turmeric
5ml lemon grass or two fresh storks, bruised
400ml coconut milk
Cook this dish slowly over low coals.
Heat butter and oil in the cast-iron pot and sauté onions, peppers and garlic until onions are transparent.
Season with salt, black pepper, cayenne pepper and stir in the rice.
Gently heat coconut milk, lemon grass and turmeric in another pot or saucepan.
Layer prawns and then mushrooms on top of ingredients in the pot and add heated liquid.
Cover with lid and simmer slowly for about 30-45 minutes or until rice is cooked.
Serve in bowls.
Sorry about the 1ml cayenne pepper 2ml turmeric ....thats how the recipe came......I just kinda guess those bits

Pork Fillet Potjie

Ingredients:

   * 500g pork fillet, cut into pieces
   * 3 or 4 medium potatoes, diced
   * 200g green beans, chopped
   * 6 carrots, diced
   * 1 onion, chopped
   * 2 tsp crushed garlic
   * 20 mushrooms
   * 2 tbsp olive oil
   * 2 tbsp butter
   * 1 or 2 tbsp mild curry paste, depending on taste
   * 1 can tomato paste
   * seasoning
   * 1 litre water
   * 500ml cream

Method:

  1. Heat butter and oil and brown pork fillet pieces
  2. Add onion, garlic, seasoning and saute until soft
  3. Add vegetables in layers. First potatoes, then carrots, beans, mushrooms
  4. Mix the tomato paste, curry paste and water together and pour over
  5. Cook slowly over coals for 2 - 3 hours
  6. Add cream just prior to serving

Just bought this Falkirk on the U.K. eBay, by default, seems I was the only bidder:

Three quid!  That is AU$6.00!

This is my fifth Potjie !

Interesting story.  The seller is in Scotland, near Falkirk! He bought the item in a clearing sale near Falkirk and assured me the country of origin was Scotland! He changed the listing after I sent him the SA Falkirk website! ;D

If sellers researched the item and worded the listing correctly they would make a lot more money.  I often search obscure places in eBay to see what comes up.  The Hervey Bay Falkirk I bought would not be found under an eBay search for "camp oven".

Today Beryl brought home the SA Falkirk No 2 Potjie shown below in an earlier post.
It weighs 10kg, the Best Duty No 2 weighs 7kg.
The size is the same.
It is painted black on the outside and has felt pads under the legs, so must have been used as an ornament.
Fortunately not painted inside, but a bit of rust.

Also found an Aussie distributor of Best Duty Potjies but they seem a different design to the one I and SBB have:

Rastas you are spot on mate..

As for why do they pronounce it that way...

Potje is a dutch work for small pot
Afrikaans is basically pigeon dutch.
The Afrikaners pronounce it Poi-key, coz that is how they abbreviated it.  Just like pigeon english is abbreviated english..very phonetic.
I am not that flash at afrikaans, but I follow it quite well when I hear it spoken around me.

In July 2001, a group of South Africans organized a Potjiekos Competition (cook-off) in Windsor, Ontario, Canada. Since then the event grew into a weekend of camping with games, beer tasting competition, lamb on a spit and many more to do. We try to have it on the Civic long weekend (first weekend in August) and the venue changes every year.

The lid looks like a high dome vintage Australian pot.
