Have been wanting to try my Ginger Gem tray out again.
Have made some Mini Quiches that fit nicely in the tray. Makes 3 dozen 125gms grated cheese 125 finely chopped ham 4 tbsp cream 2 tsp mustard powder 4 eggs 1 bunch of shallots finely chopped salt and pepper to taste 3 sheets of pampas pastry. Cut the pastry with a scone cutter when still very firm. When fully thawed out push the pastry to fit into the gem tray cups. Add a small amount of shallots and chopped ham. Beat the egg, cream, mustard, salt and pepper. Pour onto the cup. Do not fill to the top of the pastry. Allow room for expansion. Add some grated cheese to the top. Place in a preheated hot oven for 20 minutes.. They'll be out soon...Photos to come. Aart |

They are out and they are good.

Ooooooh Aart you always know how to win a girl :D :D :D I love all these things hot, warm or cold :D
Look great, made me remember something else I used to make and will see if I can find a modern recipe. You and a few others in here should be in a Search for A Camp Oven Master Chef Show. They look a substantial sized gem tray the holes in the $1 one I got on the VICCOG trip are probably half that size. But I will make use of it anyway. |
