Oh, OK, your brother is now seared to perfection and being accompanied by red wine and cranberry sauce with parsnip/potato/pear mash and asparagus.
Went to a friends place last night to be served this.. Gee it worked well. The sweetness of the pear and parsnip, along with the sharpness of the cranberry in the jus/gravy was just bloody fabulous. I shall get the whole recipe and post it up |

Going to give this a go on the weekend if I can manage the time but I will use kangaroo fillet however may marinate them for a bit first.

hi
all aust game soak in salt water for 12hrs first gets rid of strong gamey flavor and do not over cook/ all game roo .goat emu better medium rare/ try it and dont tell any one what there eating |
